onions
garlic (i use lots of garlic)
large grain salt
ground pepper corn (or refined pepper) - i also add cayenne pepper because i like mine spicy
bacon(or sausage) - mince either the bacon or sausage - if you use sausage flash cook on cast iron skillet - then cool and mince - if you use bacon mince prior to throwing in the greens - both approaches should take about the same amount of time to cook

add water as needed

i like my greens with very little water

if you can only eat greens with mustard or hot sauce add some after serving

this dish tastes great on top of brown or white rice. remember to rince rice thoroughly in collander prior to cooking to remove coating - will make it extra soft

Oh my word.....need to save this thread....great ideas! Especially TerreBonne and the white bean and southern ones. Don't laugh...coll greens are SO frakin' healthy for you! My little kids even eat them. Try them twice and after the 2nd you'll be a believer, lol. Let us know, Natasha. goodnews

How about collard green soup?

Ingredients:

your greens (I use kale)
white beans
garlic and onion
rotel
ham chunks

Never in a million years did this appeal to me.
So glad I tried and LOVE it! Hope you do too.

This ^ recipe is awesome. With any of the many greens whether turnip, mustard, kale, or collards blend really well with a can of 'white' beans. Absolutely use the garlic and onion. Simmer until all the flavors come together and then enjoy one of the most delicious and healthy soups you can make.

I've never added the rotel, it's good without it, but if you enjoy the rotel go ahead and use it too.
