I don't trust my own ability to can foods. I have the necessary equipment to start canning jelly, figuring it would be easy, but I am hung up psychologically on my lack of skill regarding getting that good seal. How do you ever know if your seal is tight? How do you test it without ruining the seal?

once you get into doom-eating, at a gentle boil, boil everything 20 minutes.

Cans from the store can be tested by observing if the the lid is domed. If you can make the lid go pukka pukka by pressing down on it, throw it away. The lid should be an inny, not an outty.

The whole argument is silly from a prepper perspective. Far more people will be unable to source food or even clean water, and it's more probable to die from simple dehydration FIRST, then starvation, and wayyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyyy down the line by the relative risks of botulism. It's not even in the top 100 list.

Gasteroenteritis was common and killed tons of people in history. Strep pneumonia results in both stomach flu and respiratory flu that progresses to pneumonia that's the bad boy as far as common disease with gasteroenteritis as a subset of it.

This^ will happen chiefly from poor butchering of game animals for realistically speaking people don't have livestock. In a survival situation seldom will people be able to hunt or trap in sufficient amounts due to either lack of skill, the caloric requirements of hunting and trapping in burning up MORE calories than ingesting, or because overhunting/overtrapping quickly results in a dearth of animals in as little as two months.

As such, the preponderance of people will DIE of common things not live long enough to can their deer meat or beans and accidentally get botulism.

This is one of the dumbest topics on prepping in a long time folks.

Wake up and learn skills and buy supplies. That's the prepper motto, not being worried on canning which any 5th grader can do with high pressure cooker and jars and lids (one use or resealable).

Because the OP is spreading disinformation, I recommend that this topic be deleted. We have very fine topics on canning methods as well as many topics describing canning and other pertinent prepping methods.

The last thing we need is disinformation by a less than adequately knowledgable person at best, or a shill at worst.

Agreed, see my previous posting above as well as within my 1st link in my sig. It's way easier and might be much better for you if you dehydrate now inexpensive frozen food as it comes on sale, as well as produce from your garden as it comes in from frequent picking as baby vegetables too.

Meat is problematic to dehydrate as it requires trimming off the fat which will go rancid. The best thing to do is render lard which will be an enormous amount of calories and should not be wasted and you may can lard if you are careful. That's also in my prepping topic in my signature.

Then the lard will be added back into dehydrated meals from assembling ingredients from jars. It's BOTH/AND not EITHER/OR. Doing that will result in a highly nourishing calorie rich diet. Don't worry about the saturated fat. You'll be intensely working your "farm" and will likely become extremely lean and lose weight, not gain it.

Post-collapse, dehydration will be the majority of your preservation methods.

Note that you need to have canned goods for what if a hunting party is going out on an extended trip. They need food that is heated fast, likely over a Dakota Hole fire as it leaves a little fingerprint, burns hot, and with little visible flame and hardly any smoke.

Dehydration means you must have wells and rainwater cisterns as well as a Bio-sand filter to purify that water. It takes some time to rehydrate and so is not a fast method of cooking. The best heating method for this is using the haybox method of bringing water to a boil and then sitting it in an insulated basket which then is covered up with blankets, and then slow cooks the meal. You will waste too much firewood otherwise and run out of trees and likely burn meals on a wood fire.

Real prepping is a deeply complex method of living, not because you need a ton of brains or education, only that you must think of all of the elements which you don't do today when you pop something out of the fridge and turn on the flame on your stove.

I'm glad that you're learning how to do these ancient ancestral skills and no doubt if there's a weather disaster, a divorce, a loss of employment, or the more serious long term kinds of collapse, then your family will be in much better shape. Good for you!

NO. The biggest issue if DEHYDRATION. Three days without water will kill you. Aren't you supposed to have taken SEER training or whatever they call it in SA?

Food poisoning comes far later. Way before then, most people will have died from malnutrition.

You're foolish if you think people can really live off the land for an extended period based upon one or two survival courses. If you really believe that you do it, try it for two weeks. Bet you can't. Most survival training in the military is based upon the premise of living off of the enemies' supplies and some foraging but mostly the search for clean water and evasion of detection. Soldiers are not to live indefinitely off the land. That's not standard protocol.

The reality is only those who raise crops and livestock, dig wells and rainwater cisterns, can forage for wild edibles, know medical skills, can build tools, MacGuyver things, and on and on will make it.

So far you've added only disinformation and doing a very poor job of describing basic prepping, and you don't even have the character to admit your mistakes, and so quite intellectually dishonest to boot!

Epic fail on your part.

In history, few tribes made it as hunter/gathers. They mostly switched to some form of agriculture to survive. The Lakota/Sioux in the USA are one that mostly lived on buffalo, but also foraged for wild edibles. The same case could be made for the Masai in history but not exclusively for they did switch to agriculture.

Your way is doomed to failure for hunting/trapping will fall off rapidly as it has in history with no hunting rules.

Agreed. My extended family has canned for generations with no problems at all. My husband and I grow and high pressure can all our vegetables, and eat them all winter. Of the thousands of things we've canned, we've only had one jar spoil and it was very obvious.

This is very suspect coming from the CDC. It should be obvious to everyone by now that the new "meme" is against prepping. Prepping stands in the way of government dependence. Communists can't have that.

To the CDC's credit, they said that the number of cases of botulism was very tiny. I included their link to show real medicine DOESN'T purport than canning is dangerous. Quite the contrary. The only time that botulism is mentioned in a medical graduate school setting is to discuss it because it's rare and you might see it as a result of the now discarded use of honey in an infant formula. Other than this, you're not likely to get botulism. They sometimes would sweeten milk to get babies to feed, that's how it happened. Breast milk is naturally sweet (don't ask how I know :) ) and so to make cow's milk similar, honey was added a long long time ago before infant formula was even around. They also used beef aujus from meat drippings too.

On a related note, Clostridium of other species are issues you might see. Typically that might be things like Clostridium dificile from antibiotic overuse for gasteroenteritis or a respiratory flu which then comes back in a worse terrible way since your gut bacteria was annihilated. Or Clostridium perfringens from a wound going gangrenous. Or Clostridium tentani from soil contamination into a wound causing tentanus. All of those are way more common and in the same bacteria family and easily can happen to a prepper or someone coping post-collapse. Botulism is so rare that most people will simply see a swollen can and THROW IT OUT! Never ever eat iffy food. Gasteroenteritis is lethal and destroyed armies in history in as great a number as being wounded.
