wouldn't it have been easier for Noah to bring in just a few and let them "evolve" into the variety of life we have today???

Well it's not sensible for Noah to put the rabbits beside the tigers now is it? You don't want animals stored in food chain order!

Also i'd assume that mammals, birds, reptiles were stored in areas of the same groups

The fallen angels were the 'sons of God', who came to earth and mated with the 'daughters of men', females on earth. They were led by Satan, who was jealous at all that God had created. Satan wanted to BE God, which is why God kicked him out of heaven, and the third of the angels who followed Satan.

Satan was jealous at the creation God had made, and decided he would do some creating of his own. He and the other fallen angels mated not only with the females on earth, but also with female animals. Creating monsters, giants, and etc.

God was horrified, and brought the big flood to destroy all that Satan and the fallen angels had created. Noah and his family were a pure line, so God had him build the Ark, and take two animals 'of their own kind', along on the Ark to rebuild and replenish earth. God didn't want any of the monsters etc that Satan and the fallen angels had created. Noah picked just two of each of the animals that God had originally created. And life began again.

You know what's an interesting idea too, that when the Israelites finally went into the promised land remember there were giants etc already there, (fallen angel genes/dna) and they had to kill them. Perhaps then part of the fallen angel plan was to interbreed with the Israelites, that way then the blood would not be pure and Christ could never be born (as Mary's dna was needed too.) This is why I suppose anyway the fallen angels were so intent of settling in the land and trying their best to stay there.

I was actually thinking the other day, this is an interesting question. Do you think people will eat in heaven? I originally thought no, that the tree of life in heaven etc was a metaphor, but after jesus rose and before he entered heaven he ate fish and waled through a wall, which proves he wasn't in human form so to speak, what do you think?

On the water question. As most of the Bible uses an event or a condition of fallen man, water can be used by God to destroy or heal. Context is the key.
