Here's my winner for tonight (thank you AC-532455). I'll have it with fire roasted red peppers and boiled baby reds - For an appetizer, I'm going with - If it's freshfresh, I would recommend trying it raw...carpaccio. (You can sear it lightly on the outside if you absolutely must.) Shave slices as thin as you can possibly get it. Arrange in a circle on a plate and drizzle with good olive oil and lots of fresh squeezed lemon juice, S&P to taste, and add some arugula and shaved parm to the center of the plate. Capers and onions are a nice touch. Serve with some warm crusty bread.

I got 8 really nice steaks (about 6-8oz ea), about a 2 ½lb roast and about 1 ½lbs of hunks I could use for a stew (slow cooker - there ya go dude), or beef stroganoff.
