The taste isn't bad, man. It's not great though. Like I said, it reminds me of Old Milwaukee. I realize that it won't impress an experienced brewer like you but it's a good recipe because all the ingredients can be stored indefinitely. And when the SHTF, even Old Milwaukee will taste pretty good. LOL. I own a homebrew shop and work in a brewery FYI Also, to further the point - with no boil, you haven't sterilized the ingredients (which is more cause for concern about wild inoculation). Wild yeast aren't bad, but you'd produce a sour beer not to mention oxidized (because again, it's not in a sealed container). This is as complex as a subject as you can imagine. I applaud you and your family for ingenuity and being a part of keeping the homebrew culture alive. Prost! |

That certainly would vary the quality depending of where you live. I've never had a problem with it here in WV (yet) but one never knows. I do know that we have a lot of wild yeast around here because some of the old-timers here don't buy their yeast--they collect it on a potato that's cut in half and placed somewhere warm. To be honest, I don't know what could be used in lieu of malt syrup. I'm not really an experienced Brewer in general. I just have this one simple recipe that has worked well for me. The malt syrup is easy to find though. Blue Ribbon brand is what I get. As far as other additional flavorings go, I'm sure some hops would be good. Really, the potential flavorings are only limited by your imagination.
