I'm not that partial to keeping any flies around and bees would be for honey and not pollination duties and they aren't on any list at the moment.

For this particular recipe, I don't use Brewer's yeast. This recipe is for plain old bread yeast (like Fleishman's). Brewers yeast will probably give you better results but you don't need it.

To collect wild yeast, do the following:

There are probably better ways to do it but this is how the old-timers and hillbillies here do it.

1. Take a big potato and cut it in half lengthwise.

2. Set it outside in the shade for a warm day. This lets flies and bees land on it.

3. Take it inside and set it on a saucer someplace warm (like on top your water heater).

4. Keep it moist with a few drops of water.

5. Watch for fuzzy mold. Scrape it off and throw it away.

6. Look for foam. That's the yeast. Scrape it off and store it in an airtight container someplace cool.

The potato will obviously start to stink. If it smells "yeasty", that's obviously a good sign.

Like I said, there are probably better ways to do this. Look it up.

Don't get me wrong, there are FAR better tasting recipes out there.

This recipe is the one my dad taught me and his dad taught him. They used to make it back on the farm when my dad was a boy.

It's simple to make and is composed of easily-obtainable, easily-storeable ingredients. In a POST-SHTF situation, you and your neighbors would be glad to have it.

Like I said, this isn't the best tasting brew and it won't impress the connoisseurs out there. It tastes something like Old Milwaukee.

Materials:

5 gal bucket
Towel
String

Ingredients:

1 can of malt syrup
1 5 lb bag of sugar
3 packets of yeast
5 gallons of warm water

Combine all ingredients into the 5 gal bucket and stir well. Try to get as much of the sugar and malt to dissolve as possible.

Cover the bucket with the towel and wrap a string around it to hold it on. This keeps the bugs out.

Put the bucket in a warm place. Right in your house is fine. You want it to stay about room temperature.

Leave it alone for 2 weeks.

After 2 weeks, take the towel off and you will see that the brew is foamy and smells like beer/bread. Stir it well and try to get everything that didn't dissolve before to dissolve this time. Cover it back up with the towel.

Leave it alone for 2 weeks.

After these two weeks, the brew is technically ready to drink but you'll probably want to further refine it. Here's how:

Filter the brew through the finest cloth you have. It will still be cloudy. That's fine.

Put the brew in sealed airtight containers (Mason jars are best). Leave for another week or two. This carbonates the brew and clears it up to some extent. Don't bother the containers of beer during this time. You'll see that whatever yeast remains will settle to the bottom in a thin white layer and the rest will be golden and clear.

After you've let your containers carbonate and settle, then they're ready to enjoy.

When you get to the bottom of the jar, just be careful not to stir up the thin white layer. But even if you do, it's fine.

A little bit of tweaking in your future batches will eliminate the sediment.

My point, exactly.

Back in the day, people didn't know about unclean water.
They only knew it made them sick.. so they drank a lot of beer and wine.

The springs and flowing water were safer then,
and people were somewhat immune to pathogens due
to a lifetime of questionable water sources.

Not so, today.
Anyone drinking from natural sources of water in the outdoors will get very sick if they don't boil or treat it.

Hence, the beer.

The table sugar seems to be what gives this recipe that light "Old Milwaukee" flavor. It's not bad.

But I agree with what you say. For the recipe's sake (along with simplicity), 1 big can of malt syrup per batch is OK. It would probably be good to replace some of that table sugar with brown sugar or molasses. I might try that sometime.

It's fine to drink and doesn't taste bad. It's not Stella Artois but it's plenty good enough. I've made 10 or more batches of the stuff. No one's ever complained. The most frequent comment about it has been "it tastes like Old Milwaukee" though some people say it tastes like Old English malt liquor when it's made a little stronger. Not bad for such a simple recipe using nothing but storeable "dry" ingredients.

I say give it a shot. It's cheap and easy to try.

I've never made whiskey. My dad used to make brandy on the farm though. They made it out of grapes and cherries.
