Don't get me wrong, there are FAR better tasting recipes out there.

This recipe is the one my dad taught me and his dad taught him. They used to make it back on the farm when my dad was a boy.

It's simple to make and is composed of easily-obtainable, easily-storeable ingredients. In a POST-SHTF situation, you and your neighbors would be glad to have it.

Like I said, this isn't the best tasting brew and it won't impress the connoisseurs out there. It tastes something like Old Milwaukee.

Materials:

5 gal bucket
Towel
String

Ingredients:

1 can of malt syrup
1 5 lb bag of sugar
3 packets of yeast
5 gallons of warm water

Combine all ingredients into the 5 gal bucket and stir well. Try to get as much of the sugar and malt to dissolve as possible.

Cover the bucket with the towel and wrap a string around it to hold it on. This keeps the bugs out.

Put the bucket in a warm place. Right in your house is fine. You want it to stay about room temperature.

Leave it alone for 2 weeks.

After 2 weeks, take the towel off and you will see that the brew is foamy and smells like beer/bread. Stir it well and try to get everything that didn't dissolve before to dissolve this time. Cover it back up with the towel.

Leave it alone for 2 weeks.

After these two weeks, the brew is technically ready to drink but you'll probably want to further refine it. Here's how:

Filter the brew through the finest cloth you have. It will still be cloudy. That's fine.

Put the brew in sealed airtight containers (Mason jars are best). Leave for another week or two. This carbonates the brew and clears it up to some extent. Don't bother the containers of beer during this time. You'll see that whatever yeast remains will settle to the bottom in a thin white layer and the rest will be golden and clear.

After you've let your containers carbonate and settle, then they're ready to enjoy.

When you get to the bottom of the jar, just be careful not to stir up the thin white layer. But even if you do, it's fine.

A little bit of tweaking in your future batches will eliminate the sediment.

***ETA***

To clear up a little confusion:

1. You obviously can't add exactly 5 gal of water to the bucket. Just add your other ingredients first and then add warm water up to about an inch or two from the top (to allow some room for foaming). Then cover with the towel and tie it off.

2. Homebrew is not hard liquor. It's beer (or technically "malt liquor" in this case). It has about 6% alcohol give or take. I am judging that by my countless hours of drinking everything from light beers (4.5%) to malt liquors (6%) to high-gravity lagers (8-8.5%). So I haven't tested it scientifically.

3. This recipe calls for plain old bread yeast (like Fleishman's or similar). You don't need brewer's yeast. You might have a better product with brewer's yeast though. I don't know.

4. For the asswipes claiming that homebrew has no use in a "hard times" situation, consider the following:

Beer is nutritious and has lots of calories.

It gives you something clean to drink.

It gives you morale after working your fingers to the bone all day.

It helps relieve pain.

It helps you bond with your neighbors.

It's a good item to trade or use as a gift.

It helps promote human reproduction.

IT'S NOT ABOUT GETTING "DRUNK". But it can be nice to have that option when it's time to celebrate.

I'm not big of home brewed beers but it isn't too hard to harden cider. I've fortified it with yeast and sugar/honey/brown sugar with great results. You can use a balloon and pin hole for a poor man's air lock. Keep in mind, you can also "distill" by freezing if you would like something stronger like apple jack.....

It's just like letting mash ferment for moonshine. It doesn't have to be sealed.

I just called my uncle who is makes moonshine, cider, and beer in between building nascars and hunting lions...

It doesnt matter if its a homogenous solution. The alcohol evaporates out of a water solution much much faster than the water evaporates.

With an airlock, you would have a higher % of alcohol. An airlock will keep the air above the liquid saturated with alcohol vapor, which will drastically reduce alcohol evaporation at room temp.

A better small setup would be to use two-liter bottles or something similar with a small top, and put a ballon and rubber band over it with a pin prick hole in the rubber band.

It takes about the same time to ferment, but it takes a lot longer aging period to taste good. esp if made during warm weather. something about high temps makes it take a lot longer for the diesel taste to go a way. mine tastes really good after about 6 mos if made in winter, sometimes up to 10 if made in summer.

When you cant find syrup or white sugar, mead's the way to go cause you will still be able to find honey, unless fucking Monsanto, Dow and Bayer manage to finish killing off all the bees before SHTF.

Here's the no-fuss, no-equipment, low-tech way to get started. I highly recommend the Lalvin D-47 yeast over Fleishmans though, if you can get it. Stock up.

Tip - Go take the intro beekeeping course at your local agricultural extension agency NOW. They teach them this time of year. Go ahead & get a smoker & a veil & some gloves, and some woodenware. Get on the wait list for some bees in March/April when they start selling bee packages. Get 2 in case one suffers colony collapse. I only got 1 last spring and was sorry, when they didn't make it. Will be getting 2 this year.

Also - never ever get greedy and take all your bee's honey. Always save some to feed them during the last part of the winter & the summer dearth. Very important not to let them starve. Esp with climate change and the weather being so variable. Is actually best to only take what's left in the hive in the spring, once the spring nectar flow starts, so you can be sure they won't starve.

This post should be re-pinned. Great post and no bs anywhere to be seen. Bit of a rarity for GLP. I'm pretty new to homebrew I've got to pretty good lagers under my belt and now I'm brewing a Stout using my own recipe. One thing I can say about homebrew that you will notice straight away is the quality of the drink. No chemical non stop pissen bloating shite in these drinks. I would recommend using a closed fermenter with an airlock.

In an open fermentation, you get a layer of CO2 blanketing the beer - this should protect the young beer.

The main reason for the closed fermenter is to prevent wild yeast form entering and altering the flavor.

The alcohol has a much lower boiling point than the rest of the liquid, this is how stills work.

To your question,(my guess) I don't think you would have much evaporation at room temperature in two weeks, and evaporation into the dry air would take all liquids (beer), unless you approach the boiling point of alcohol (or people would not need stills with eight foot chimneys to distill.
