| Anonymous Coward User ID: 904314 02/22/2013 06:01 PM Report Abusive Post Report Copyright Violation | Super easy western vegetarian bachelor food! 1 onion 1 green pepper 1 red pepper a few garlic cloves a couple of big standard mushrooms 2 carrots 2 celery sticks a broccoli bundle a cauliflower bundle a hot pepper or two (if you like spicy) Chop the crap out of all of it into smaller bits, fry for a few moments in your favourite veggie oil (so that the veggies sweat and steam and are crunchy, but not so much that they become mushy and gross). Makes several meals worth of surprisingly tasty stir-fry, easy to freeze some, use as a full meal or side dish with rice (though the point of the cauliflower is to replace the rice with a healthier low-carb choice). Can use yellow pepper too of course, the above is just what I usually use _/|\_ |

The best investment I ever made was a vegetarian Lebanese cookbook -- I love lentil and chard soup or red lentil potatoes soup, hummus...falafels, salads...that lovely lemony saltiness -- so many nice salads, too. Delicious. |

| Anonymous Coward User ID: 33838111 02/25/2013 12:34 AM Report Abusive Post Report Copyright Violation | Vegan Appetizer 6 large Portobello mushrooms Pico De Gallo (see recipe below) Remove stems from mushrooms, place upside down on a oiled baking sheet, mound on Pico De Gallo and top with Mozzarella or Pepper Jack cheese. Bake in a 350 pre-heated oven for 15-20 minutes. Remove and sprinkle with red chili pepper flakes. Pico De Gallo 3 large diced tomatoes 1 diced medium sized onion 1/4 bunch of cilantro (use more or less depending on your taste) juice of half a lemon or lime 1/2 teaspoon of minced garlic 1 tsp of salt 2 jalapenos (or more if you prefer it hotter) Once you make the Pico De Gallo let it sit in the fridge for an hour or so, then turn into a strainer or collander to remove excess liquid so it won't saturate the mushrooms. |
