One of my fondest memories from childhood: Back in the stone age when I walked home for lunch from elementary school, my mom sometimes made toasted tuna salad sandwiches. They were soooo good ! Mix a can of tuna, finely mashed boiled egg, finely chopped onions, finely chopped sweet pickles, mayo and spices... spread on bread with a fine layer of mustard. Butter both sides of the sandwich and toast in a pan. Yummm :) . |

I replaced the tuna with crushed chickpeas (without the skins) like the vegans do, and it tastes fine, just takes a little longer to make. I never thought of grilling it, thanks for the idea! |

Tuna is costing $1.95/6.5oz can here and that's a generic brand out of Thailand not Star-Kist. Most stores here no longer sell Star-Kist because of its high cost compared to the cheaper brands. I pay the price and buy the South Pacific Tuna when I can find it. What is the cost of a 6.5oz can there now? Fresh grilled Tuna is great, the only local palagic fish that beats it in taste IMO is Wahoo, fresh Wahoo blows fresh Tuna out of the kitchen! I'll also take canned local Wahoo over canned local tuna any day:) Farewell American Samoa, the "last stop of today and just a stones throw from tomorrow"and with that said and done I stood up, standing at the end of the day and walked boldly onward into tomorrow and to the given day of rest. |
