Hi OP,
Here's something to consider as I have late-adult onset AADD (Adult ADD).
I wouldn't look to food allergies first. Break things into smaller parts instead. Instead of giving him a list of three things, give him one. Then two, etc.
One thing that helped me was putting things on colored paper to help organize my mind (red = important, yellow = steps, etc.)

He tested positive for the foods I listed, as well as four common molds, dust mites, and dogs and cats. I've done lots of behaviors modification techniques with him, but nothing was really helping much. He would just space out during a school assignment or other task. He was also fairly defiant, oppositional, and incredibly moody, in spite of consistent discipline. These behaviors are quickly disappearing on his new diet.
