Early days I might have the lyrics visible on stage, sometimes just memory jobbers, the first few words of a verse for instance, after you've played it a few times you don't generally need anything. The ear phone are 'in ear' monitors, basically it allows the singer to hear himself without being drowned out by the band, this way you can sing in key easier.
