The guy was probably running the machine himself and cleaning it at the same time. Or he might have been cycling the blades to expose a new section for cleaning. Either way... ewwwwwwwww.

I WAS a contract Automation Engineer all my career, did contracts for many giant corps - SAFETY devices! - yea I know CIP (clean in place) safety devices CUT POWER to the drives - it was improperly designed. (drive = AC vector or DC constant torque, variable RPM) ADM Cocoa grinds tons of cocoa beans every day (yea, same one Jeffy Daumer worked in, sept they moved - was Gracy Cocoa - for example) NO WAY anyone could be ground up. - PROFITS rule, safety and proper design do not matter.

Note to self, avoid meat processing plants. I knew a guy that got sucked into a tree chipper, the only thing they found of him was sprayed into the back of a truck, I also avoid tree chippers.
