If you eat authentic Mexican food, it is actually quite bland. We add all the spices that make it so good. This thread made me hungry LOL Lovey, lol, I was a restaurant industry and private (personal) chef for nearly 20 years when I was younger...I don't write recipes, nor do I ever follow just one recipe (unless I'm baking). If you've never made tamales then you should know they're timely to make. Not hard, but timely. Even so, the homemade ones are so worth the trouble every once in awhile, especially if you get friends to help and make a party of it. I suggest if you want to try making them you get the masa flour and look at the recipe on the back, and then also look at cooking websites that offer user reviews (allrecipes.com is one I like) and compare them. I think it's a fairly standard recipe for the masa part, except I'm suggesting that ham fat is used instead of the called for lard/shortening. You can fill them with anything (as you'll see in varying recipes), but I usually fill them with seasoned shrimp. They are good made the regular way, they're just remarkable while using the ham fat. Either go to Mexico or make friends with some people who were born there. Same with Chinese food and several other cuisines, we don't get the real thing here in the US. I'm not big on Mexican food but REAL Chinese food (Japanese and Thai as well) ranks top of my list. Greek and German are up there too. |

Mexicans use a lot of dried/smoked chilis and that's where the flavor really explodes in sauces and when roasting meats and meat marinades. Restaurants don't do that, it's too labor intensive so the food is more bland and not as authentic. |
