The knights had strong muscled horses, vs the Mongols, the short height steppe horses.
The Knights had heavy metal armor. The Mongols had light lamellar armor with the back being not covered by armor.(so they couldn't turn their backs on a battle!)
The knights were good at a strong defense. Their horses tired out in long chases owing to the heavy armour worn by the knights.
The Mongols used fake retreat tactics to lead them on until their horses tired out, then just slaughtered the knights.

A full suit of battle armor weighed no moe than 60 lbs.

Some claims need a reality check. Society of that time had a vast majority of farmers and peasants. Metal had a big price. The Mongols were rough as they lived in an area where trees and water was in low availability round the year.

But they were not the sick people you make them out to be.
Genghis Khan himself spread sick propaganda about the Mongols because this was war-time strategy. He spread the info that the Mongols were cannibals etc.
