I picked spinach from my garden yesterday and made creamed spinach. Now that's a yummy way to eat your spinach.
 Quoting: ElusivePisces 11156436

awesome. I love creamed spinach.
 Quoting: eekers

Would it kill ya to put a little no nitrate bacon in it? I can eat any of the raw greens, but when you start cooking em, it's like eating something I just scraped off of the bottom of a dock. I've tried many ways over the years and found that if I put some nice partially crisp bacon in with the greens they go down easy. My wife doesn't even have to play the airplane into the hanger game to get me to eat em either.

LOL I try to use stuff with no nitrates in it. Yesterday I made endives with turkey bacon (no nitrates) and sauteed onions it was pretty good. I like bacon, I just try to steer clear of the preservatives. Bacon makes everything better.

I love spinach and green beans cooked in bacon grease. I know it's not healthy. It's really the best way I've found to season them without having to add an assload of salt.
 Quoting: BioReaper

mmmmmmm...bacon and chicken grease are the only two I keep to cook with later. mix with a little peanut or olive oil and anything you're frying is tastier. We use a lot of garlic and onion powders and don't use a lot of salt outside of Himalayan pink salt for seasoning.

Do you guys like papayas or jicamas?
 Quoting: BioReaper

I don't really care for papaya, I think it's too dry for a fruit. But I love jicamas! Those are so juicy and good! Had no idea what we were buying when my husband and I wanted to try something we never had before. We didn't know what to eat it with or how it's prepared so we just ate it plain!

Just kidding, not one of those threads. Just wanted to make the point that you can eat filling foods and still keep it low cal.
It wasn't raw spinach, btw, I sauteed some garlic in coconut oil then steamed it in the pan with a lid on.

What's your favorite quick, nutritious meal?
 Quoting: eekers

I like what you just made actually...lol!
I do spinach OR rainbow swiss chard, sauteed with salt / pepper / garlic and usually do a poached egg on top. I raise my own hens, so the egg is from my backyard.

Think I'm hungry now, and feeling inspired :-)

What does chard taste like? I saw it in the movie Coraline and was kinda grossed out by it. I liked the other mother's cooking better, lol.

The eggs indeed taste really good. I haven't bought store bought eggs in about 6 years. I've got 9 hens, and usually get between 5-8 eggs a day during summer season. I'll give my neighbors eggs as a peace offering for having to listen to the squaking...lol! Especially when my family get's sick of all of the quiche...that I use sauteed spinach or chard in :-)

Cheers Eekers! Enjoy your fresh greens :-)

My wife is from Puerto Rico and is how I found out about this yummy tuber root. We use it much like a potato in soups/stews and thin slice julienne them for salads. My favorite is to slice them thin and fry them in bacon or chicken grease with a little peanut oil too. Sprinkle garlic and onion powder and add a little Himalayan pink salt too. Sooooo good and we now eat them more than potatoes. oh yeah...I also scoff down a couple handfuls of spinach and a handful of grape tomatoes too. Didn't want to derail the spinach n tomato thread. I may have that for dinner tonight. Bacon, spinach, tomato AND jicama fried in bacon grease. mmmmmmmmmmm.

The latest thing I had with spinach was some stir fry (yeah, I know, that wasn't Italian, but still good)

I don't really care for papaya, I think it's too dry for a fruit. But I love jicamas! Those are so juicy and good! Had no idea what we were buying when my husband and I wanted to try something we never had before. We didn't know what to eat it with or how it's prepared so we just ate it plain!

Do all the Puerto Rican's use bacon grease to cook with? lol, my oldest daughter's father is PR and once I tried some of her grandmother's chicken and I think I insulted her by telling her it tasted like bacon! lol! She was like, "VUT?"

Organic free range chicken takes some getting use to, if, like me, you lived on store bought all your life. The meat is heavier tasting and darker. Your great great grandparents would recognize it lol

I was just commenting on another thread about free range chickens, I prefer their eggs to their meat. I think I ate a rooster last time and the meat was gamy and tough.

Roosters are gamy indeed. What's the old adage?
"Roos are for stews" ...lol.

Speaking of stew, I love cabbage stew with pork shoulder. I just pulled some meat out of the freezer for tomorrow nights dinner. I always add a jar of sauerkraut to make it a little more tart with the fresh cabbage. I just season it with black pepper, salt and paprika.
