aww!
just to clarify, I'm not against the meats!! the buffalo is still A-OK with me!! prefer grass fed beef to corn, that's all :)
 Quoting: eekers

It is healthier no doubt. But people who raise grass fed livestock sure do think a lot of it.
I wish I had more time so I could do even less.

I hope after eating all that spinach you got plenty of toilet paper otherwise you will have a problem. That is the #1 problem with healthy foods they make you have to run to the bathroom way to much.

Has anyone ever had poison ivy? My husband always talks about this but I have never had any. But the poison ivy is a little different from the USA that he's talking about but I'm not sure. He makes a joke about the hardest part is gathering it, my grandmother used to make it but I never had any.
 Quoting: nah

ooh, never knew that was edible! interesting!
 Quoting: eekers

I never knew that either until my family was discussing it one day. I never heard of people in the USA eating though but I know it is a poison ivy or oak, not sure which one is edible or both.

Now I am craving my grandmother's watermelon rinds. mmm, she made them in a sugar water and it thickened up like a jelly, sooo good.
 Quoting: nah

that sounds amazing!!! love watermelon, didn't know you could make jelly with rinds! xoxo nah, you're the best!
 Quoting: eekers

I was really young when she made it so I never got her recipe but it's a preserve. This recipe is really old so it may be close to hers. She made just the white part too. Today is the last day of the watermelon sale at Aldi too, I'm buying a couple more today! I'm going to try to make the rinds myself.

Just kidding, not one of those threads. Just wanted to make the point that you can eat filling foods and still keep it low cal.
It wasn't raw spinach, btw, I sauteed some garlic in coconut oil then steamed it in the pan with a lid on.

What's your favorite quick, nutritious meal?

Hmm, I will have to give spinach and tomato a try! Sounds good! I might cheat and sprinkle a little grated parmesan over the top :)

Not sure if its healthy, but last night I had tuna over sliced tomatoes. It was simple, quick but pretty damn good!

Very easy!

You need:

2 md/lg eggs (please for the love of god free range)
3.5 cups water (i use spring) OR 32 oz free range broth
*if using water, 1 tbsp chicken stock to make broth
1/4 cup onion (green onion preferably, or red), chopped
1 tbsp corn syrup (agave can work as well)

Prep time less than 10 minutes.

Bring water or broth to a rolling boil.
If water, add the tablespoon chicken stock and stir until consistency resembles broth.
In a spouted measuring cup, mix a spoon of broth and the tablespoon corn syrup until smooth. Pour into boiling broth while stirring.
Add the chopped onion. If you just want flavoring, use the whole and extract it after done.
Beat eggs in the spouted measuring cup with teaspoon broth. Keep somewhat thick.
Pour egg into boiling broth, stirring slowly.
Lower heat to simmer.

Remove from heat. Let stand to thicken and cool.

Enjoy!
