Okay. Here's mine. (I confess I have not read the entire thread so if this is duplicate, please forgive.)

Baked vegetables - I use yellow squash, mushrooms, sweet potatoes, zucchini - all or any combination thereof.

Wash well, then slice the squash and sweet potatoes. Dry them well. Coat with olive oil and some kind of bread crumbs (I prefer organic and GMO free) and herb seasoning of your choice.

Bake in the oven at 375 degrees for about 20 minutes and turn for a few more minutes.

Voila! Easy and makes a meal for me when I'm by myself.

Also excellent with a dipping sauce of your choice.

...Did you know you can also bread with peanut butter? ;)

I should have said peanuts instead of peanut butter. I'm such a retard lol. You use dry peanuts and grind them in a blender on fine then use them as you would fine flour. Works with crackers as well.

Excellent! Have to try the peanut thing.

I actually made my own bread crumbs in the food processor once when I was feeling very industrious, and that worked out very, very well.

I'm thinking "easy" and quick and healthy.

Baked potato deluxe.

Throw (or place, heh) a large baked potato in the oven, after washing it well, of course. (I am a huge anti-germ, anti-pesticide person.)

Then split it and top with

Butter
Plain yogurt
Chopped onions (the green kind)
Chopped tomato
Bits of broccoli
Salt and pepper

That's it. That's dinner.

How long did you saute' it for? Sounds good. I don't like mushy spinach very much. Rather have it raw with some light dressing.

Not I, but when my grandmother was as poor as can be, that's all they ate. She used to send my dad and his brother out to collect them but she told them not to get any from a graveyard. IDK why the ones at the graveyard weren't suitable, anyone know?

It wasn't raw spinach, btw, I sauteed some garlic in coconut oil then steamed it in the pan with a lid on.

What's your favorite quick, nutritious meal?

Spinich wheat pasta - boil to al dente

Place in serving bowl and add:

Fresh spinich hand diced raw

Fresh cilantro hand diced raw

Greek Feta Cheese chunked and crumbled

Pitted Greek Kalamata olives hand diced

Add the above to pasta and squeeze three halfed lemons (and ev olive oil if so moved) and mix.

nah, I try to keep as much nutrients in the food as possible. the more you cook stuff the more vitamins and minerals you zap out of it (I'm talking about veggies, not things like chicken, of course)
