Quoting: Ms. Superduper Baked vegetables - I use yellow squash, mushrooms, sweet potatoes, zucchini - all or any combination thereof. Wash well, then slice the squash and sweet potatoes. Dry them well. Coat with olive oil and some kind of bread crumbs (I prefer organic and GMO free) and herb seasoning of your choice. Bake in the oven at 375 degrees for about 20 minutes and turn for a few more minutes. Voila! Easy and makes a meal for me when I'm by myself. Also excellent with a dipping sauce of your choice. I like to use panko or tempura to bread some of the smaller veggies like okra. Kinda switch things up from the old can of italian crumbs in my pantry lol. ...Did you know you can also bread with peanut butter? ;) |

I actually made my own bread crumbs in the food processor once when I was feeling very industrious, and that worked out very, very well. Throw (or place, heh) a large baked potato in the oven, after washing it well, of course. (I am a huge anti-germ, anti-pesticide person.) Then split it and top with Butter Plain yogurt Chopped onions (the green kind) Chopped tomato Bits of broccoli Salt and pepper That's it. That's dinner.
