Baking bread with natural ingredients
[There are many articles and videos available about capturing wild yeast for both bread making and alcoholic beverage making. Here's one that seemed reasonable]


Yeast has been used for fermentation and baking throughout history. In fact, it is likely one of the world’s first domesticated organisms. There are pictograms of ancient Egyptians making leavened bread and brewing beer that date back thousands of years! It probably seemed like magic back then. All you have to do is leave out flour and water and it creates this amazing substance that allows you to make things like leavened bread and fermented drinks such as beer and wine. It wasn’t until 1857 that Louis Pasteur discovered that yeast was actually a living organism.

Yeasts are very common in the environment, but they are most prolific around sugar. It naturally occurs on the skin of certain fruits and berries. For example, it is a natural yeast on the skins of grapes that allow for the fermentation that is necessary to create wine. The yeast you need to make bread and beer though, usually come right out of the air. See? Just like magic!

Now, of course, you can just go buy yeast in the store. This domesticated yeast is standardized and reliable, unlike wild yeast. However, if you want to see what kind of yeast you can cultivate at home just out of curiosity, then here is the way to do it.

sour dough


if too sour you can add once the bread has already fermented a bit of soda and honey to neutralize acidity...but first try to keep the temperature not to low.
since acetic acid is produced at low temp

usually is good to let the product you are fermenting to slowly pass trough different temperature to allow to all strains to develop but do not let it too long below 15C

Thanks for the info, I did not know about the acetic acid.

I used to have a sweet dough starter that I used for a long time. I did not let it ferment, just fed it whenever I made bread. I kept it in the refrigerator, and would just take some out when I wanted to bake, feed it some more flour or potato water, and put it back in the refrigerator again.

It made the nicest, sweetest bread.

Do different brewers' yeasts have different taste, like different bakers' yeast?

I find that the newer bakers' yeast has a bitterness now than it did not used to have. Maybe because it is a faster rising strain.

Now you're onto it. All yeasts are different, and will do slightly different things and the end product will taste different.

That's why the wild yeast idea is a bad idea. You could have YEARS of trapping wild yeasts before you find one that does the job you want and produces a result you like.

There's no reason you couldn't make a batch of home brew with bakers yeast to make bottles of bakers yeast colonies for storing. The beer probably wouldn't taste good for drinking but.

Now that is an idea, use the beer as a storage medium. I think the idea behind the wild yeasts is to use the yeast off fruit, rather than just set out a bowl of flour batter. I could see that it would take a long time, as you say.

That being said, I live in wheat country, and last harvest I cut some heads and brought them home, am going to try to doing the yeast capture with some wheat, rather than just out in the air.

In late summer, I think you might have luck capturing a good air borne yeast where they are harvesting, as the molds would not be prevalent in the hot dry air. Though it is dusty.

On a different topic, I have been buying an unpasteurized vinegar the last couple of years that insists on making mother of vinegar in the bottom of the cruet. I don't have the heart to throw it away, so I slide it off into a little jar and feed it now and then. I have too many little jars now, I wish I could find somebody who wants a nice vinegar start. They are kind of cute little lens shaped colonies.

I do not disagree with that.

But there is spelt, which tastes like wheat used to taste, decades ago. There is also kamut. Neither of them are wheat. I even got some emmer to experiment with.
