Why can't this model be scaled up to be the best fighter jet ever made,
the Harrier could only dream of doing this. Couldn't this just be scaled up?

I'm sure it could be scaled up but some of the maneuvers it was performing would not be too good for a pilot. Also a battle hardened fully weaponized full scale model probably could not perform the maneuvers of a light weight model airplane.

That looks just like a scaled down version of the French Rafale fighter jet.

That much mass spinning like that would kill a live pilot and may rip the unit apart because a full size unit has more mass.
