Though the name of the very first cheese monger is unknown, an ancient legend tells us that the first cheese may have been made accidentally by an Arabian merchant, who carried a supply of milk in a pouch made from a sheep’s stomach, as he set out across the desert. Only some Chinese from Eastern and Southern regions are lactose intolerant and that is intolerant to bovine cow milk. They are not intolerant to goats ' or yaks' milk. The Chinese in Yunnan make butter and cheese from yaks' milk, those in Northern and Western China use mares' milk. |
