EGGS ! Is thiis TRUE about USA eggs ? (genuine question)
Hi, I have 2 genuine questions to ask of cooks, chefs and parents who regularly cook eggs for either their customers of family. (and I may be VERY wrong on BOTH)

I have kept chickens for about 30 years and my family and neighbours LOVE the browner eggs. My favorite is a poultry variety called Maran, or cuckoo maran that lay a very dark brown egg with black spots. All of the people I know prefer brown eggs.

I have been watching a lot of US cookery shows recently and they all seem to use WHITE shelled eggs. Is there a real preference in the USA for white ?

The other thing i would like to ask is about lots of recalls i have seen on US websites regarding salmonella in eggs.

One stunning reply by a US egg producer said that in the USA brown eggs are "milled" to remove the colour and so produce white shelled eggs. This milling obviously thins the shells and allows bacteria (salmonella) to enter the egg far more easily.

Is this right folks ? It seems a bit odd to me so i would like to hear what you think.

In the hope that you are joking BUT as polite education, the colour of the chicken has no bearing on the colour of the egg shell. I have some wonderful "blonde bantam chicks) excuse the pun that lay BLUE eggs. My Marans are like black and white chequer boards that lay dark brown eggs.

Refrigeration does affect an egg. It can stop the white from cooking properly so most chefs do NOT chill eggs but cook from room temperature.

The one fallacy I have blow out of the water is when people praise "from chicken to egg cup in less than an hour"

I love a boiled egg for breakfast. Solid white and a runny yolk. If you try to boil an egg that is less than 12 hours old the white simply does not set! It is a grainy sludge.

My girls eggs are put in a COOL place for 24 hours and THEN they are at their best.

I am a chicken breeder and also an American expat

In the US, the primary commercial breed is a white leghorn. They produce white eggs.

Americans don't know any better. They have no idea about eggs at all. They buy white eggs because that is all the stores carry. There may be brown organic free range eggs for 5x the price of caged eggs but most americans don't know the difference enough to be willing to buy them.

They don't "mill the colour off" but they do wash the eggs. They don't bother to produce clean eggs b/c of the washing process. (of course, I can't really work out how caged eggs get too dirty to begin with? so much that they need washing?)

Anyway, there is a bloom on the egg--a sealant put there by the chicken--that keeps it fresh for months and keeps bacteria out.

Because of the washing process of eggs in the US, all eggs are sold refrigerated. And Americans all keep their eggs in the refrigerator. If they don't, the eggs will go badly VERY quickly.

Thank you for the education! I always was under this impression about the color of the chicken makes the color of the egg. The eggs I get from my family farm are all sorts of colors and some white, the chickens are mostly brown but I have no idea which one is laying the green eggs! lol.

Chickens that have white ear lobes lay white eggs. White leghorns lay white eggs and are used for production in the US. I used to have some and they laid like crazy. My hens are all brown egg layers currently, but I'd like to get some Leghorns again.

Yes, the white chickens used are white leghorns. Those are the commercial layers in America. In NZ, the commercial layers are brown shavers (which lay a brown egg). (Colour matching of birds and eggs is coincidental)

The difference between a "farm fresh" free range egg and a store purchased caged egg has to do with grass. Eating copious amount of grass (as free range farm birds do) will give you a golden yolk.

Caged birds produce an anemic yellow yolk.

Do you realize just how hard it would be to Mill and egg? Seriously. What do they use? Sandpaper? that would be the ONLY way to "mill" and egg, maybe chemicals?
I worked for an aerospace company and we used chemicals to mill aluminum parts. NASTY work.

Even on a belt that was sandpaper, the eggs would shudder and crack open I would think. They crack very easily as YOU would know working with chickens and all.

So I seriously doubt it, besides, aren't the insides of brown eggs brown?

Your family may have a strain called Aracuana. I think they were originally from S America but i am sure the breed must be mixed with your families stock. Honestly the most important thing is WHAT THEY ARE FED! Great fresh and NORMAL food means great eggs. Processed plastic gives you less than average tasting eggs.

The eggs I get from my neighbor have a darker yolk than the store-brought ones. They taste richer too.
I'm sure it is because of the hen's diet, and free range (well, a couple of acres)

Only problem is that the membrane under the shell is thicker on my neighbors eggs, and is harder to crack when opening them. Sometimes have to pick out shell fragments.

American conventional eggs are gross. I always thought I didn't really like eggs, but it turns out I just don't like the horrible mass produced ones. I started buying fresh eggs from a co-worker who kept chickens, and they were SO much better! And healthier, too, most likely.
I don't know why the factory eggs come in white and brown- they taste the same. I remember, growing up, there was a commercial where the jingle went "brown eggs are local eggs, and local eggs are best." Not sure how true that is. White eggs are good for dying at Easter. But really, eggs from happy, well fed chickens are the best eggs. I would love to keep chickens someday, just enough to produce eggs for my family.

The thing is, that if you get hold of an egg as it is laid you can wipe of all the colour. The colour only fixes after about 10 mins. The inside of brown eggs are NOT brown. They are all white inside with only colour as a thin smear on the outside.

Eggs are pretty wonderful things but you have to get up close and personal with hens to see this.

I really do not like eggs- but I will only buy free-range eggs- I would love it if my neighbor would share his eggs from his hens---my fiancé thinks I am crazy because I keep asking him to let me get some chicks to raise! Ofcourse he thought I was crazy when I tried to explain the difference about free-range, caged and fresh eggs..silly city boy, just doesn't get it! I want a couple goats too. Nothing beats fresh and healthy food! He likes shit that comes in a box...but I am slowly converting him!

Hi, yes the egg tastes richer because it IS richer. I dont want to gross you out BUT a well fed hen isnt wanting to give you good eggs BUT to produce great chicks.

The membrane again is to protect the chick against infection BUT it does the same protecting you from salmonella etc.

On a lighter note, the toughness of the membrane is usually linked to the humidity of the environment. If you live in a really hot ,dry area the membrane will be tougher to keep IN the perfect moisture for the developing chick. Here in the uk membranes are average as we are not too hot or too wet.

The simple answer to this question is that, beyond the color, there is no difference between chicken eggs of different colors. White and brown eggs are nutritionally identical.

On a side note.Did you know the chickens that lay those eggs can never be sold for human consumption,because of the hormones used in them to pump out the eggs?It is illegal to use hormones in chickens for human consumption.So most of those chickens lay for a few months then are made into dog food.

The simple answer to this question is that, beyond the color, there is no difference between chicken eggs of different colors. White and brown eggs are nutritionally identical.

I highly doubt any eggs are naturally white anyway, you can bet that all of the ones produced for stores are milled of the color.

WOW Some of you need to read up on chickens!

I have owned and raised them for 20 plus or so years. Leg and feather color does not make a hill of beans on shell color,
and shell color does not make a difference on taste and quality of the egg itself. What makes a difference is the quality and variety of what the hen eats.

Free range hens eat grass and bugs along with grains and have a dark rich orange yolk and a stiffer perkier white. Battery hens are fed a cheap pelleted food and have a pasty light yellow yolk, devoid of nutrients and a thin runny white.

Do not wash or refrigerate for the BEST cooking quality.

Something most non chicken people also think is that you have to have a rooster for the hens to lay eggs, also false. Hens lay with or without a rooster.

If you have never raised chickens you have never had a real egg.The commercial hormone pumped chickens that lay pure white eggs spending their whole life in a tiny cage do not produce real eggs.If a chicken where to sit on one of those eggs they would break under the weight.The yolks are very thin and barely yellow.
I can not even eat a store purchased egg.They lack flavor,texture,and even color.
To bad 95% of the people in this country will never know any different.

Yes , sadly VERY true.

My first 2 hens were bought from a caged battery farm of hens that were going for dog food. They were totally featherless, had never stood on the real earth and cost me $1 for both.

I kept them from sept to april with no eggs. THEN they had feathers, they ran on grass (a modest back garden) and then gave me an egg a day for 9 months every year until they were about 5 years old. As a single person they provided MORE than I could use so I was able to pass them to friends.
