I like fried eggplant by itself, very good, maybe sprinkle parm on it but skip the sauce. Do you soak yours first in saltwater? I never tried making it myself.

My mom's got some old time southern recipe of a type of eggplant casserole but it's kind of like stuffing, not sure what's in it though.

Yep fried eggplant. Never tried brining it but that sounds like a good idea, as long as you don't over do it.

I tried cooking it for only the second time a week ago. Made a Chicken Cacciatore with eggplant in it. Didn't soak the eggplant in salt water just simply diced one and added to the dish.

Super simple but very tasty! Slice eggplant vertically and place in a Ziplock bag overnight with enough Italian dressing to coat eggplant. Remove and grill! And I don't even like Italian dressing....but it's pretty tasty!

I've never heard of soaking it in a brine. I slice it and lay the cut strips in a colander or paper towel, then sprinkle with salt to draw the water OUT. Then grill top with drizzled olive oil, garlic and chopped mint. Or oven fry by drizzling with olive oil, salt and pepper. In Sicily I saw spaghetti with red sauce rolled in a piece of eggplant, then topped with sauce and cheese. That was very tasty. There is always Baba ghanoush!!

If there is a Uno restaurant close to you, try their roasted eggplant on flatbread pizza. Its made with a pesto sauce. Pretty cool...

I forgot to add... There was a Thai restaurant in DC, I used to go to, They had an eggplant appetizer that was made with hardboiled eggs and eggplant topped with peanuts.

well i take eggplant wash it real good then slice it long ways into strips then take and season it with spices roll it into flour then put peanut oil in a fry pan and fry not till it gets a lil crisp to it then layer it in a baking dish as you would make lasagna eggplant, sauce, then mozzarella cheese and keep layering it til the baking dish is full then top with mozzarella cheese and bake for 30 minutes and then enjoy a true dish it will be so good and you will never find it in the best italian resturants
