This higher oil temp allows the stuff that comes in contact with it to cook fast leaving the inside nice and fluid while the outside is completely cooked. Veg oil medium-high heat. |

Every time you do it, you can try to make it better. You will get your technique. Break the egg into a cup first, carefully, and place it carefully into the pan. Old eggs and industrial eggs tend to break easily... Nothing like some organic free raised chicken eggs. You can pour hot oil on them with the help of a spoon, if they are still runny. I found that eggs straight from the fridge instead of room temperature are best to get the runny yolk. |
