Skirt steak. Lay them in some lime juice and garlic for about an hour. Hot them with brown sugar and cayenne on the grill

We get thin chicken breast and marinate half in fresh squeezed lemon, Italian parsley, picked fresh and garlic and the other one we marinate with a little bit of teriyaki sauce.

It's always a big hit at all our bbq's and it cooks up very fast so you can do it after work and eat before 8!

Re: Hey there GLP, a little help: WHAT SHOULD I BBQ TODAY?
Chicken kabobs with cherry tomatoes, pineapple, onion, and bell peppers threaded on in between the chicken. Baste them with some oil, preferably sesame seed oil mixed with vegetable or peanut oil.

Marinate the chicken pieces in some soy sauce, fresh ginger and garlic, and a bit of brown sugar for an half-hour or so, before threading onto the kabob spears.

Baste with a bit of teriyaki sauce or sweet and sour sauce at the end of grilling these, and serve with some rice cooked with a can of roasted garlic chicken stock and a touch of ginger juice and a handful of chopped scallions.

Well, then you are cooking out on the grill and not barbecuing to some of us. Most Southerners only consider it BBQ if slow cooked for a very long time with tangy hot sauce.

Different colloquial I suppose.

Re: Hey there GLP, a little help: WHAT SHOULD I BBQ TODAY?
Around here if you say you are going to eat barbecue it doesn't mean fish or chicken. It usually pulled pork, so,eti,es beef.

I have known of people to boil ribs in big pot for a bit before cooking on grill to,cut down on the time. Drain, slather with sauce and continue cooking on grill. Yes, it's cheating. It I do know it has been done with pretty good results.

Hungry, eh?

Then I'd better not tell you about eating at the Twix N Tween BBQ in the Centerville area where Bear Byrant would sometimes also be dining.

He had a big booming voice and my younger kid wouldn't his hands over his ears and frown just to embarrass me.

They had a huge open fireplace like pit with whole shoulders sort on a rack where they slowly moved them up to the top of the rack as the meat cooked . When it got to the top after a few hours, ow was done and there were a out six whole shoulders in rows of three.

I can still smell it in my mind after all these years, wonderful memories.

Bear Bryant would just come in. That would be so awesome, so awesome.

I've never been to the Twix n Tween (although I have heard stories of it), but I was in BBQ place in Florida a few years back that did "Texas Style" BBQ. I had a mixed meat platter (brisket, Sausage, pulled pork, corn, slaw) it was so good. Best I've ever had.

She's right you know. Go for a brisket. Takes about 8 hours, but they are awesome if done right. Start it tomorrow morning and let it cook all day. You'll thank me later.
