Still in the office right now, just dreaming of when I leave in 2 hours. T-bones are great, but I had strips last night. Ribs tomorrow maybe... |

It's always a big hit at all our bbq's and it cooks up very fast so you can do it after work and eat before 8! |

Baste them with some oil, preferably sesame seed oil mixed with vegetable or peanut oil. Marinate the chicken pieces in some soy sauce, fresh ginger and garlic, and a bit of brown sugar for an half-hour or so, before threading onto the kabob spears. Baste with a bit of teriyaki sauce or sweet and sour sauce at the end of grilling these, and serve with some rice cooked with a can of roasted garlic chicken stock and a touch of ginger juice and a handful of chopped scallions. Most Southerners only consider it BBQ if slow cooked for a very long time with tangy hot sauce. Different colloquial I suppose. . Believe me, I take my time on the grill, but ribs take the better part of a full day to make right. I don't have that time today. |

It usually pulled pork, so,eti,es beef. I have known of people to boil ribs in big pot for a bit before cooking on grill to,cut down on the time. Drain, slather with sauce and continue cooking on grill. Yes, it's cheating. It I do know it has been done with pretty good results. Then I'd better not tell you about eating at the Twix N Tween BBQ in the Centerville area where Bear Byrant would sometimes also be dining. He had a big booming voice and my younger kid wouldn't his hands over his ears and frown just to embarrass me. They had a huge open fireplace like pit with whole shoulders sort on a rack where they slowly moved them up to the top of the rack as the meat cooked . When it got to the top after a few hours, ow was done and there were a out six whole shoulders in rows of three. I can still smell it in my mind after all these years, wonderful memories. . Bear Bryant would just come in. That would be so awesome, so awesome. I've never been to the Twix n Tween (although I have heard stories of it), but I was in BBQ place in Florida a few years back that did "Texas Style" BBQ. I had a mixed meat platter (brisket, Sausage, pulled pork, corn, slaw) it was so good. Best I've ever had. |

Takes about 8 hours, but they are awesome if done right. Start it tomorrow morning and let it cook all day. You'll thank me later. |
