I like the natural flavor of the pumpkin to shine through. I would probably just add some cream.

This is the recipe I am deploying

• 1 x 2kg whole butternut pumpkin
• 1 brown onion
• extra virgin olive oil, for drizzling
• sea salt
• 3½ cups (875ml) chicken stock
• 1 cup (250ml) single (pouring) cream
• 1 tablespoon honey
• sour cream, to serve

I'm vegetarian so wouldn't use the chicken stock.

I couldn't imagine pumpkin soup without a little black pepper! Some nutmeg and cinnamon too.

Along with the sour cream and olive oil, garnish with some freshly chopped parsley or coriander.
