Bear this in mind when doing your meal planning and shopping:
Carbs = 4 calories per gram
Protein = 4 calories per gram
Fat = 9 calories per gram

Vitamins A,D, E, and K as well as carotenoids are fat soluble so add fat to your vegetables.

Do not waste money on anything "low fat". Just eat smaller portions of full fat foods.

When the SHTF fat will be more precious than gold.

Eggs are still a relatively cheap food. They have the perfect fat/protein/carb ratio and contain all the amino acids.

Chicken and dumplings :
Leftover chicken ( cooked )
One can of pot pie soup (2 cans for more people )
1 can cream of mushroom soup
One bag frozen mixed vegetables
1 can country style biscuits (cut each un cooked biscuit into quarters)

In a large skillet with lid , mix all ingredients except biscuit quarters .
Place biscuit orders on top trying to cover the entire pan .
With lid on bring to boil until biscuit dough fluffs up .

Easily feeds 5 to 6 people .

Rice with a little chicken (not much) and almond chips. It's a great meal, and keeps well. You can use Rice-a-roni, or what ever rice you prefer. Make lots 'cause it's hard to have left overs.

I eat this not because it is extremely cheap, but because it tastes great, is filling, can be eaten hot or cold, and lasts for days even without the fridge, and is done on one pan or pot if necessary.

Haluski:

prepare a lb. of pasta - al dente

cut a cabbage into slices (maybe about french fry size)

large dice a large onion

chop a few heads of garlic

Melt some BUTTER in a pan, add onions, and fry until soft and translucent

add garlic for a minute or two

add cabbage

fry away until it starts to meld together and look slightly brown around the edges - add olive oil or BUTTER as you see fit

add the noodles and more BUTTER or olive oil, and a good bit of salt and pepper (and maybe some red pepper flakes, and whatever else seasoning you enjoy)

Fry until stuff starts to brown up real good and smell caramelized.

add a little sprinkle cheese for a real rich version.

A simple brown bread made from wholemeal flour, baking powder, an egg, no kneading. Add some mashed banana, brown sugar and cinnamon if you like.
Slice and freeze for later.

Canned sardines cooked with onion, garlic, canned tomatoes, serve on toast.

Oatmeal, for breakfast, with cinnamon and banana.

Dried pulses, obviously. Make chillies and freeze along with rice.

Home-made vegetable soups freeze well, serve with your home-baked bread.

Frozen veggies too, you can buy fresh and freeze, or purchase the frozen ones in bags, just as healthy and much cheaper.

Frozen spinach: cooked with chickpeas, garlic and raisins. Lovely as a side served with potatoes or fish/chicken.

Herbs, spices: buy these from a local ethnic deli, much cheaper and better quality too. Can be frozen for freshness!

Above all, home cook. Costs more time but less money and healthier. Plus, you deprive the junk food corporates of your valuable money!

My mother was famous for being able to reconstitute a meal from leftovers and have it taste like something brand-new...

Start cooking up cornbread, or even look into casserole style dishes. Relatively inexpensive dishes to make and can be reheated and enjoyed ... i.e. green bean casserole, corn casserole, etc

Eggs are pretty cheap even though they are supposed to kill you. I make a lot of keesh and even pies with nothing but eggs and stevia with a can of evaporated milk or just dry skim milk blended until like syrup

I don't use anything for a crust. Just spray the dish with oil and pour the blended eggs, stevia and milk in. Add maybe almond flavoring or vanilla. Bake at 350 for 30 minutes. Taste like cheesecake

Here's a goody!

Get a cheep roast, add salt, pepper, and 3 beef bullion cubes, slow cook (covered) it in a big pot for 5-6 hours until it falls apart in its own juices.

Add a bag or 2 of peas & diced carrots...cook for 15 mins.

Add thickener (water & corn starch) to turn all the juice into gravy.

It ends up like the inside of a beef pot pie.

You can eat it like that, or pour over bead/rice/pasta/etc.

Just did a beef roast with a lot, I mean a lot, of potatoes and carrots, After 2 or 3 meals of this, mine always gets ground up for hash. It can be devoured instantly or frozen.

I get those little aluminum freezer boxes with the lids at the dollar store and freeze in them.

Farm Housewife Hash

Leftovers, however much you have:

Roast beef or pork
Potatoes
Carrots
Gravy or drippings

Fresh:
Onion
1 slice bread (heel is best)

Grind up the roast beef, carrots, potatoes in a meat grinder (looks like this [link to www.wayfair.com] or chop finely

Grind up 1/2 to 1 whole onion, depending on your taste and how much meat mix you have. If using meat grinder, put a dish under the grinder to catch the onion juice, then add it to the ground up stuff too.

Grind up the bread last, add it to the other stuff. It will clean your grinder, sop up the good stuff.

Add the gravy to the meat and veggies and mix it up. If it is too dry, mix up a beef bullion cube in a cup of water and add it to your taste. You want the hash to be moist, but not too soggy.

If there were not many potatoes, you can mix up a helping of instant mashed potatoes and add that to the meat, a little at a time, mixing it in.

Taste it and salt and pepper to taste if needed.

Turn it into a hot skillet with enough oil or grease to at least cover the bottom. Cast iron is best. Cook till a browned crust is formed on the bottom, then turn and brown the other side. You can put a lid on it and let it cook for a long time at low heat too, or even cook it in the oven at 350.

Asian spices like curry and things like MX chili are great and go a long way. Cornflour to make your own tortillas etc, wheat flour to make biscuits. Turkey/chicken's cheapish as for as buyable meats go and you can boil the bones for more flavor to make stock.

Frozen vs fresh, fuck the haters frozen's just as good. Asian market has cheap vegetables and fish/fish parts. Fish head makes a great fish stock.

You can also use high-quality cheese rinds (like Parmesan) to make cheese stock. Vegetables for vegetable stock.

Certain times of year you can forage certain tasty things, get a guide, join a grp or find a botanist and you'll have food. Stinging nettle makes good spinach substitute, just take care with the spines.

Dumpster diving helps and don't be squeamish, with proper precautions small game and wildlife can also be on the menu. Just don't eat city possum, it smells and tastes horrible. If you know any hunters offer to relieve them of their extra venison or gator or whatever other meats. Rattlesnake is also edible.

my wife just made some bomb diggity chicken and rice. she added some seasoning and 2 cans of cream of chicken. it was light yet filling.

The boxes hold enough for 2 meals, which I like

I can more easily label them.

Hence I use them for main dishes

I also have square freezer boxes that I put bags of fruit and veggies in, for the same reasons.

Steel cut oats with cinnamon and bannana. Make a huge batch in crock pot. Fills you up. Doest f*ck with issulin levels as much this way. Add nuts if you can but that can make it pricy. Keep refrigerated. Grill chilled dolups next morning in butter on cast iron skillet. The more banna the sweeter.

Lemons are expensive where I am. I think 2 for $1.50 (non organic) is 'spensive', esp. if one wants to make lemonade, which is much better for you than some other beverages.

I especially bought a couple of organic lemons primarily for the seeds and now have seedling started for a potted lemon bush. It CAN be done. Imma trying it.
