How can you make enough chicken breast to last the week if you can't reheat it?
I would like to meal prep but I don't want to eat cold chicken and rice or cold fish etc. You can't reheat because you will get food poisoning. So how do you do it?

If you let your food cool to room temp before refrigeration it will not give you food poisoning. Cooked meat is safe to eat if refrigerated for at least 3 days

Never once have I gotten food poisoning from reheating meat. Definitely have never waited 3 days to reheat again also.

A week is stretching it though.

The trick is to make a dish with lots of sauce so you can freeze and then nuke without making the chicken too dry.

Why use a microwave? Just defrost and heat the chicken gently in the sauce on the stovetop until piping hot (with the lid on). There's nothing a microwave does that conventional methods don't do rather better.

If you nuke it sufficiently you can eat anything without getting sick. 2 week old chicken might not taste good but you won't get sick. High temp nuking kills the germs.

yuh, if you let it cool and freeze it. also raw chicken carries a lot of bacteria so, use a separate chopping board and knife, or clean same with very hot water...like if chicken is your main protein watch a food handling and hygiene video about handling raw chicken.

Buy the most fresh meat you want. Cook in pressure cooker. Remove from stove. Place under cold running water to cool down.
Cut your meat in portions, best in slices about 1.5/2 cm, froze them right away.

It will defreeze in few minutes.

should be fine two weeks later, as in it's not even going to come close to poisoning you.

what causes poisoning is cross contamination.

I'm confused...Why can't you reheat it? For fear of food poisoning?
Never use a microwave, it's a shitty convenience, but if you do, put some water on it to keep it moist...will basically steam it.

If you can't reheat: take it from fridge and let it warm up at room temp until you're ready to eat it.

We buy rotisserie chicks at Whole Foods, eat some, then put the rest of the bag in the microwave to store for the next day and eat at room temp...After that we'll toss any leftovers in fridge.

You should have no problem storing cooked chicken (and broccoli, or pretty much anything similar) in the fridge for at least a week if it's well sealed without issues.

Personally I don't mind eating cold food and so usually avoid heating...But if I do it's in the oven.

It's called chicken salad.chicken, onion,finely chopped celery, mayo or miracle whip (your preference) a little garlic salt and dill pickle relish. Will keep for two weeks in fridge and wonderful on bread or toast. Add lettuce for a healthy meal. Problem solved.
