Re: How can you make enough chicken breast to last the week if you can't reheat it?
I would like to meal prep but I don't want to eat cold chicken and rice or cold fish etc. You can't reheat because you will get food poisoning. So how do you do it?
 Quoting: Anonymous Coward 73859353

Big guy I don't know who has been lying to you but if you are refrigerating the food afterwards in a sealed container, reheating any meat is fine, even microwaving all you need to do is keep it covered with the lid, not sealed when using the microwave just lay it on top of the container, it keeps in the moisture.

As for what you've been told someone had to be pulling your leg, you won't get food poisoning if you cooked it right and stored it correctly.

Nuke it in a microwave safe container and it's stays pretty decent.

lightly wrap in damp paper towel and give the meat short bursts with the microwave. too many people want to just throw some naked piece of leftover meat in it and set it for way to long and walk away. short controlled bursts with something moist covering the food is the best way with MW reheating.

Re: How can you make enough chicken breast to last the week if you can't reheat it?
Had a housemate from China who was doing post doctoral research at NIH.

He would cook a huge container of pork soup. When it was done eating, he would put the leftovers in the cabinet with no refrigeration!

He would proceed to eat off of it for three or four days. He never got sick. No bugs showed up either.

He used a lot of ginger and maybe some other herbs when he cooked it. Probably cured the meat. IDK.

In the old days before refrigeration, meat was salt cured and hung up. We've lost that skill now that we have refrigerators.

This will involve rotation. But cook cut it freeze it. Then pull out what ul need a day or so before u need it. Then do more of a chicken salad or samich pita wrap type deal so u don't have to use a microwave.

& share some with me bcuz I like to ad it to meh burritos and whatnot.

Read kitchen counter cooking school.

When food is microwaved, the food and the water that is in the food retain memory of the microwave frequency. It's not a healthy frequency.

You can wrap in foil and reheat for 15 mins in a 350 degree oven

Make sure your refrig temp is at 40 or below 36-38 perfect.

Meals : day1 fresh
Day 2 reheated in foil
Day 3 reheated in a can of Creamy chicken soup (your choice)!on the stove
Day 4 chicken salad - cold with mayo dressing and some chopped onions
Day 5 stir fried in soy sauce with rice or over ramen noodles

Well fuck no. I've never heard of such. I've eaten plenty of meals of all kinds that were in the frig for a week (or more) and I've never had the slightest problem. I have no idea where you got such a silly notion.

Your frig does work properly, doesn't it?

When I brine chicken or pork or turkey, I might leave it in the frig for a week BEFORE I even cook it.When you cook or reheat something you heat it enough to kill the germs.
If it's week old chili from the frig, I just heat the fuck out of it to kill anything.

Obviously most things do not culinarily improve with aging in the frig.
I don't have the time or the crayons to explain this to you.

Freeze small portions. Pull out what you need in the morning and let it defrost in the fridge until you cook it. You can cook it from frozen if you put it in some water on low heat for a while then turn up the heat at the end.

Three day rule, do not eat left overs after three days. Freeze what you do not plant to eat within three days. Yes reheating is fine. Do not leave food out warm for over 30 min, put in frig or freezer.

^^ throw a few tablespoons of water in with a loose lid microwave doesn't dry it out works good for heating rice, noodles, meats, etc..

OP is confused. The rule is do not let frozen meat thaw and then try to refreeze it.
You have to cook it, then you can freeze or put in the refrigerator.

Why use a microwave? Just defrost and heat the chicken gently in the sauce on the stovetop until piping hot (with the lid on). There's nothing a microwave does that conventional methods don't do rather better.
 Quoting: Anonymous Coward 74516745

This works well. Divide the chicken into two storage containers or even three. Save some out to wrap in plastic wrap as is (cooked) for sandwiches or soup. Put different sauces over the chicken. Pour mushroom or cream of chicken soup over one, pasta sauce over one, chicken broth and cooked rice over the other.

You can put them in the freezer compartment for end of the week meals.

Reheat as mentioned above.

REAL food poisoning takes 48 Hours to hit.

Most people are bitches and look for every excuse to whine, like an upset stomach lol.

FYI Most everybody gets Salmonella poisoning which is usually no more severe than an upset tummy. NOT FOOD POISONING.

Risk for salmonella also comes from the EXTERIOR of eggshells. It DOESN'T grow inside the egg (though will grow if it can feed off it's content).

Munch on that next time you want to check you eggs in the grocery store then continue on touching everything else including yourself.

I cook for a living OP. Safe cooling of your batch of food is a must. Aim to cool to room temp within 90minutes. This is easier to do if you split the food up into portion sized containers. When it is sufficiently cooled store in the fridge or freeze.

Reheating pre-cooked meals is perfectly safe. Buy a food thermometer and make sure that, when you reheat the food is over 75 centigrade. ( I'm always sure if the temp is in the 80's or 90's.

Buy the 2 pound rotisserie chicken breast at COSTCO.

It's the best. It's ugly packaging is just a vacuum sealed bag with writing on it.

Find it in the prepared meals section like where they have the shrimp cocktail, wrap sandwiches platters, uncooked chicken pot pie, etc.

HA! You must be very young and/or have a limited amount of contact with a diversely limited type of people. Some of the past couple of generations still think cooking IS the use of a microwave "oven". I like to actually COOK but see many that really have no idea what they're doing in front of a stove OR HEAVEN FORBID...an oven. With all the cooking programs on television and online I thought more would have AT LEAST common knowledge of the kitchen by now. It just sadly seems that many more than use to...think of it as a place to store your microwave meals and cold drinks.
