You can if you don't mind being severely constipated. You also run the risk of dying of an early massive heart attack if you are "cholesterol sensitive", have caronary, cardiovascular problems or are diabetic etc..In which case you could just skip the yolks and live on the egg white (albumin). Apart from all that a diet of living off eggs should be fine, if thoroughly boring.
