I felt the need to make quiche also .... it's in the oven as we speak...

Put your puff pastry sheets out of the freezer off to the side.

fry diced, full fat and tail, bacon, and cook the shit out of it.

drain fat off, and put it in a bowl with fresh diced onion and smashed diced garlic, stir the heat of the cooked bacon through the onion and fresh cut garlic.

Let it sit.

Get your mini flan tins ready.

Rub butter all over them.

Wash your vegetables like you do your arse.
Properly.
Every time.

Dice capsicum and a tomato. The size of end of your little finger.

Mix with bacon onion and garlic mix.
Add salt and pepper and mixed herbs of dust.

Mix fistful of cheese [good tangy] per one and half fistful of diced ingredients.

Cut the barest minimum of your puff to fit inside your flans. Wonky droopy edges are required.

Fist fulls of mixed diced and cooked mixture, into puff lined flans.

In another bowl, crack lots of eggs. 4-6

Whisk.

Add cream. half a 600ml-ish

Whisk again.

Pour evenly into stuffed flans.

Top with grated cheese.

wrap over top excess non perfect puff pastry.

Bake.

When it smells right.
It's done.

I put it in the oven for 6 hours and it still doesn't smell right. It smells very wrong, tbh.
Should I let it bake a little longer?

about 180 for a fan forced or 160 for not, for about 1 hour - ish.

If your pastry is golden, it's done.


Made individual 7 layered black forest ice creams last night,
as well as,
beef and onion savory stew,
and seafood chowder.

Got the cooking a feeding bug.....got fuck all to feed....

Dice good quality dark, well hung, steak.
Coat in plain flour salt & peper and dusty mixed herbs.

Quarter and slice to 6th or 8ths, 3 fist sized onions.
Chop tails and heads of 2 large carrots and slice the thickness of your little finger of rounds.

Fry steak cubes in hot pea nut oil till ready to eat, and still bloody.

Stick the lot in a crock pot with a lid.
add
half a tin of tomato soup and water, stir, to cover all about 3omm. 3cm/3 fingers depth.

Put it in the oven on 200 fan forced.

stir every half hour for the next 2 hours.

add diced celery, one cup of diced pumpkin and a cup of peas.

Return to oven.

Cook for a further hour.

serve with potatoes in their jackets, and lots of butter and crusty warm bread.
