My 6 year old daughter was diagnosed with Celiac Disease @ 3 yrs old along with countless Indigo Children. I have MS and wheat gluten has been linked to brain lesions. Coincedence? I think not.

15% of population is gluten intolerant and don't even know.1% with Celiac Sprue. Everything from obesity, ezcema and fatigue. Even Autism is linked. Another brain disorder.

With wheat on the down spiral why not go gluten free? There are a lot of alternatives out there.

You can do a lot with rice and corn.

Post any ?s I would be happy to make suggestions.

Almost all processed foods have wheat and/or monosodium glutamate as well as GMO corn and corn syrup.
All of these items I am sure wreck havoc with our health.
I have been wheat free for three years. At first it was very difficult because I love bread but it has become easier and easier as I see the benefits.
Can you provide link about indigo children and wheat problems?

my daughter is sensitive to ALL grains and corn. I dont have any problems with feeding her a mostly fruit/veggie diet with a little meat put in.. and eggs. she is also dairy sensitive.

The only problems i find is having family believe and be suppotive.

i am gluten sensitive too. i try to avoid it. except, again, around family.. because it is just too difficult.

my son seems to be senstive as well, has egg and peanut allergies.

there was a rise in allergies after the introduction of GMOS but no one wants to hear that.

and the establishment wants us on grains because its CHEAP and easy. way to hard to feed us all on fruit/veggies and meat (if you so chose)

We did an elimination diet for her. Basically potatoes, avocado turkey were the main parts but did for a year and got her on intestinal repair homeopathy for 3 months after diet. A lot of work but better than the 3 weeks of initial vomiting/diarreah and loss of 1/5 body weight.

I know what you mean about family support NONE.

We give our daughter Glutenese (spelling?) It contains enzymes. Really great if she gets a hold of some at school. It should be in first aid kit for sure.

I quit eating all wheat a couple of years ago. I am glad I figured out that it was the wheat (also rye, barley, oats) causing the terrible gut cramps and bloating and awful gas pains. I can't even eat a little bit of it. But, in a way it's great, because I can only eat really healthy food, no baked goods, no donuts, cookies, crackers, junk. At my age I should be glad. I don't need that stuff and am much better off with my fresh salads all the time, homemade soups, etc.

I am sorry for people who are having terrible digestive problems and pain and don't figure out it's the wheat that's causing it.

I'm wheat intolerant too, and I'm having fun discovering new recipes.

Here is my recipe for coconut muffins - they really are lovely, and if you are missing your wheat muffins, you won't after these! I serve them with fruit:

3 Eggs
1 tablespoons coconut oil
¼ cup sifted coconut flour
honey to taste
100ml coconut milk


1. Blend together eggs, oil, milk, honey, and only lastly coconut flour (sift
the flour and throw away any bits that will not sieve).
2. Add coconut flour until right consistency is reached. (around the same consistency as American pancake batter) The coconut will expand, so leave a minute to rest before you see the consistency.)
3. Fill 4 medium muffin cups halfway with "batter". Use paper cups as the muffins do stick, and when you take them out of the paper, a "lining" remains in the paper tray.
4. Bake at 180 (350 fahrenheit) for 25-30 minutes - the buns keep really well as well.

I never did bake very much, and still don't, but I had good luck with a couple of recipes from the Land O'Lakes site, I tried the gluten free cornbread and the gluten free pound cake.

Here's the link to their page on gluten free baking, with recipes, first you mix up their flour substitute mix, I make that up in advance and keep it around, mostly to make cornbread:

One good thing is these recipes use real butter, cream etc which you would expect from a dairy products site. I had good luck with the cornbread recipe substituting yogurt for the sour cream and using half and half or cream instead of the milk it calls for. I also soak the cornmeal in the milk for a while before I mix it all up, it softens the cornmeal and makes the bread less gritty. The three tablespoons of sugar this recipe calls for, is the right amount I think. I tried it with less and it wasn't enough. I don't like it too sweet but the three tablespoons is just right.

I have heard from a lot of people that cook and bake a lot that these big corporate sites like Land O'Lakes are good sources for recipes because they have big commercial kitchens and test everything rigorously. It's a good starting point especially for tricky baking things like gluten free.

I only made the pound cake once, the texture is good, but it's way too sweet, as I remember.

Oh here's another tip for a good meal that's as easy, quick and cheap as pasta. I use frozen green beans as a substitute for pasta so I have something to put a home made red sauce on. It works great, just steam the frozen green beans and make your quick red sauce however you like it. Serve with parmesan cheese. Highly recommended. You can have french cut green beans for variety.
