If pop means popular, was classical music once called pop and disliked by the elders of the time for being too hip? Will pop be called classical?

Popular meaning “of the population”. Classical music was institution of the elites, so no, it was never popular music. The popular music of the time would be considered folk music, shantys etc

In fact, the entire reason the term popular music was created was to form a distinction between institutional classical and church music, and the music of the people.

A better point of contention on the the term would be jazz. At one point it was thoroughly popular music, but over time it became institutionalized by university music programs that have been teaching it like classical form. One could argue that is a a form whose status as popular music has changed over time.
