Cheap & Easy Soup
Enough to feed an Army

Vegetable Soup

You start out with as many garden fresh vegetables as you can get your hands on.

Celery
Onions
Potatoes
Carrots
Corn, cut away from the cob
green beans
peas
garlic
parsley
parsnips, diced or sliced. They add a good flavor.



Peel and chop your vegetables. Save peelings in a freezer bag and you have the makings for good vegetable stock.

Add a couple splashes of oil to the bottom of a big pot. Medium low heat.

Now add your choice of meat and cook until it browns up. Toss your onions & garlic in the pot & give it a good stir.

Add a couple large cans tomato sauce and a few big cans of whole, stewed tomatoes.
Toss the whole mess of vegetables in the pot. Add about 2 to 3 cups water. Salt, pepper, paprika, onion powder, garlic powder. If you like heat, some hot pepper flakes.

Set to low heat and simmer. The tomato base will soften any meat you add to the pot.

The recipe makes a lot of food. If ya know how to use a pressure cooker, dump some soup in jars. If not, the soup can be frozen.

Make as little or as much as you want. It can be stretched by adding more tomato sauce. Cheap, healthy, lip smackin' good eats.

Somebody needs to come up with a library of Fall/spring cole crop recipes...turnips...kholrabi...mustard greens that sort of stuff. People you can take your tiller and work up a small space in your back yard and plant cole crops. Turnips are easy. If we have a bad winter, you can thank yourself!

cold crops? it is actually the easiest garden to have, plants like kale can be left out all winter and eaten, mulch your root veggies to make digging easier

Yep, plant a big patch of beets or buy them at the store. Beet soup(hot or cold) is tasty, healthy, inexpensive, and easy to prepare.

actually the term is "cole" ...it refers to the cabbage, turnip, greens species that thrive in the early spring or fall. In my area, turnip beds do best in the spring but can produce well in the fall through Christmas if watered...or if we get enough rain. With the price of food on the rise...combined with reports of a harsh winter and other uncertainties, it might be good to have something to fall back on. Turnip seed is cheap. In my area it's still not too late to plant green beans...

well then, one more for ya, pick your green tomatoes before the last frost, carefully wrap them in newspaper and put them in a box, keep them somewhere cool and dry, they will slowly ripen, i have been able to add fresh tomatoes from my garden for thanksgiving dinner, in michigan, with snow on the ground ;)

2 slices of whole wheat bread, coated with olive oil on one side.

place one slice, oil side down, in a hot cast iron skillet.

Top with 2 slices of Velveeta cheese.

Place other slice of bread on top, oil side up.

When bottom slice is browned, flip.

Remove from skillet when second side is brown. Serve with pepperocini.

When we were broke (Dad was in construction, and money seemed seasonal when I was a kid), Mom made "Goulash." It wasn't any such thing, but we loved it. And when my Hubby and I were broke, we made it for our own kids. My daughter says it's "comfort" food for her.

1 lb ground beef, browned and drained.
1 or 2 cans stewed tomatoes.
1 med. package of elbow macaroni, cooked and drained.

Mix all three together. Salt to taste. If you need it soupier, add generic V-8 juice.

I did something similar, but I pulled the entire tomato plant out of the ground, shook off the dirt, and draped each plant over a nail on an interior wall of the garage. The green 'maters ripened on the vine, and we were eating the last of them at Christmas. Of course, I was in the desert southwest, and not Michigan, but winter is winter.

Another thread on GLP about depression had a youtube of Clara who is 91 yrs, old showing you how to cook.
Thought it was pretty good.

Peel a potato and onion, dice both and put in pan
Add little olive oil in pan. Fry until soft, keep stirring.
Open can of peas, add juice and all to pan add water – just enough to cook pasta in.
bring water to a boil water/peas/potatoes, add salt and pepper to water.
Add pasta and simmer until pasta is cooked.
(In Depression, they would turn it off with cover on pot to let it finish cooking without gas).
You can eat it plain or add tomato sauce. Don’t drain it; you eat it as a soup.

She said they mostly ate:
Pasta with garlic
Pasta with beans
Pasta with peas

Dry butter beans wash them and cook them with butter and salt.
You can cook almost all dry beans easily, and you can add onions, tomatoes, peppers just things you like and it's cheap.
Beans have a lot of protein. Cook up some cornbread or biscuits and you got a meal to feed many.

Thanksgiving Turkey

This is our 3rd year of doing it like this. I will NEVER cook a turkey in the oven again.

4 gallons of peanut oil. We use a cheap unit we got on clearance at Wal Mart several years ago. Burner, stand and large aluminum pot with lid. 350 Degrees. 3 to 3.5 minutes per pound on a fully DEFROSTED turkey.

An average sized turkey get a full body injection consisting of approx. 16 oz honey mixed with 4 to 6 oz BUTTER, NOT margarine. Heat and mix well. The rest is just how much time your willing to spend injecting this mixture into turkey. (Our cattle suringes work well for this, but the needles that come with an injector work much better. (Don't be lazy here...your tummy will thank you). We cook 4 turkeys in the same peanut oil. One could probably even do more than that. So it's always a neighbor or a friend who wants to "participate"....so it averages about 6 bucks a turkey, well worth the most sweet, juicy, NEVER dry turkey meat. Whether your into the white meat...or the dark meat, if you haven't tried it, you are indeed missing out on, in my ever so humble opinion, on what a turkey was supposed to taste like all along.

Green Bean Casserole


fresh green beans
1 can cream mushroom
1/4 finely chopped white onion
garlic salt
pepper
brown sugar
pyrex dish


soften onions in 3Tbs olive oil over low heat in small sauce pan. mix in can of cream mushroom soup with onions/oil, mix in 1/4 cup water until all is thinned.

pour heated mixture in pyrex, saving 1/3 for later.

layer all fresh green beans in pyrex. sprinkle with garlic salt, brown sugar, pepper. pour remaining 1/3 cream musroom/onion mix over beans

(add cracker crumbs or bacon/cheese on top if desire)

cover with foil

cook in oven 30min on 350

Here's my soup trick:

After cooking homemade soup, put a cup of it in the blender, blend for a minute, add back to the soup, stir and serve...YUM!!!!! maximum flavor

Another thing that adds unbelievable amounts of FLAVOR to soup is to add a little bit of liquid minerals...it's the minerals that transport the flavor to the tongue and brain, it's really quite amazing the difference.

Mamaw's Sandwich Spread

Makes approx 12 pints

1 peck green tomatoes
15 peppers (8green, 8 red)
15 medium onions

Grind or food processor the above ingredients and add 1 handful of salt and cover with boiling water. Put on stove and let come to a boil. Cook for 15 min. Drain through a colander.

Add 6 cups of sugar, 1 qt vinegar, 1 large jar French's mustard, 1 small jar salad dressing.

Cook for 15 minutes more. Take 6 TBS of cornstarch and add enough water to form a paste. Add to the mixture and cook 5 minutes more. Put hot sauce into hot sterilized jars and seal.
