I just wanted to share this with you guys. I just discovered the olive bar at Safeway. All I have to say is, whoever thought of stuffing olives with crushed red peppers is a genius! The ones with garlic or bleu cheese are pretty good, too. So are the Kalamatas. |

the BEST olives I EVER had were the slightly oily, wrinkly ones I got in Greece. Oh, and their pistachios. They KNOW their salty snacks! |

If they were purplish-green, they were probably Kalamatas. Greece and Italy are where the olive bug first bit me, too. Ever try a spanikopita? I'm pretty sure I didn't spell that right, lol. It's a Greek pastry with spinach and cheese. |

My favorite garnish LOL = love all olives, but especially salty green stuffed olives.
Funny Story: My doc had prescribed me Ambien CR to help me sleep. I don't take a lot of 'drugs' so this was a stretch for me. So, I get the prescription filled, and while I'm at the grocery, decide I want to make this Spanish Chicken Olive Dish, so I buy the ingredients, including a big jar of green olives.
Fast forward to bed time. Take my Ambien. Lay down. Go to sleep. Next Morning, wake up, turn over toward my nightstand, and LO AND F'N behold, the jar of olives was on my nightstand, totally, totally, empty, except for about 1/2 cup of juice.
Ladies & Gentlemen this is what they mean when they say 'may experience episodes of sleep eating'.
Never took another one of those little suckers again. That was downright scary.
Still love my olives LOL

If you mince up some Kalamatas or the wrinkly black olives and add them to cream cheese, and then top a bagel with the mixture, you have a delicious meal!

I bought raw fresh green olives in late Sept.
Half I cured in salt water and vinegar. They are similar to the store olives. Seasoned with pepercorns and garlic.
The other half I cured in dry salt. They turned black and dried up like raisins. These are now sitting in olive oil.
These have a dark rich flavour.
I tasted them yesterday - yum
I am letting them sit one more week before I serve them. |

I agree. The olives i bought today were in oil, with garlic, finely chopped red pepper and what appears to be oregano. |
