There are tons of wild edibles here. In a week or two, she'll be coming home from hikes with bags and bags of all sorts of wild eats. The fist time she cooked for me she made this unbelievable wild edibles salad - topped with this wild raspberry and wild onion dressing she makes. During summer she'll take trips down to the ocean where she gathers beach greens. Every summer the same people are out there harvesting down at the beach. People who don't know about wild edibles don't know what they're missing. It's a good, healthy hobby. I've had this a few times, but I've never attempted creating it myself. I will do it soon. Champagne Vinaigrette Ingredients 15 sprigs parsley, stemmed 1 teaspoon lemon juice 1/4 cup champagne vinegar 1/4 cup water 1/8 cup olive oil 1/3 cup truffle oil Salt and freshly ground pepper Instructions Bring a small pot of salted water to a boil and blanch the parsley for 5 minutes. Transfer the parsley to a blender, add the lemon juice, vinegar, water, and oils and purée. Season with salt and pepper to taste. I'm thinking a salad with some beautiful edible flowers... along with the champagne dressing... mmmmmmmm |
