For what it's worth, in the knife sharpening kit from lowes, they have besides the coarse and fine diamond hones, but a tri-angular stone that is supposed tyo shrpen the nooks and cranies of the hollow ground knife style blade.

I found you can tell how sharp it is by looking at the knife edge straight down. With the knife sharpening kit, I usually get the blade as sharp as the round knife I use to sliced my leathers.

The easy part to sharpening a knife is material removal. The idea is maintain a constant angle, so unless you're gifted like a an artist, buy one of those sharpening kits that clamp the blade and you have to guide the stone thru a fixed angle slot...These do work, but like I said above, you will wonder why it isn't as sharp as it could be, when you do everything correct...

The answer is under the microscope...You will see what looks like a film of metal that is "rolled" over the real cutting edge.. Stropping, either on a leather belt, or on a spinning wheel gets rid of this, allowing you to have that sharp surface that is hidden underneath.
