1/2 cup butter
2 tablespoons cream cheese
1 pint heavy cream
1-2 teaspoon garlic powder (start with 1 and taste)
salt & freshly ground black pepper
2/3 cup fresh grated parmesan cheese or romano cheese

Directions
1In a medium to large saucepan melt the butter over medium heat.
2Add the cream cheese and whisk to smooth and melted.
3Whisk in the heavy cream.
4Season with the garlic powder, salt and pepper.
5Bring to a good simmer and whisk frequently until sauce thickens, around 25 minutes.
6Remove from heat and stir in cheese.
7Taste and adjust seasoning's.

Weenies and Rice - Poormans food

Slice hot dogs (2-3) into small round pieces.
pan fry on medium heat untill browned, with sugar and
soy sauce. Adjust to taste, adding more if desired.

Add hot dogs to a bowl of white rice and enjoy.

That's my cheap easy, easy recipe. Yummy too. =)

10-min healthy easy Hoppin John

1 can of black eyed peas undrained
2 cups of leftover cooked brown rice
1/2 cup onion, cut up
2 cloves garlic, grated
1 tsp chicken boullion (I like Knorr brand)
sea salt
fresh ground black pepper

optional:
a couple of oz of bacon, beef jerkey or ham
handful of fresh parsley or chives

Saute onions in a little oil until tender. Add all remaining ingredients and heat through, except for pepper. Grind pepper into pot until a strong but not bitter taste develops. Let simmer for a few minutes until the flavors develop. Add more water if too dry.

From scratch Hoppin John recipe from allrecipes.com

1 1/2 cups dry black eyed peas, soaked overnight in water
1 pound ham hocks
1 onion, chopped
1/2 teaspoon crushed red pepper flakes
salt and pepper to taste
4 cups water
1 1/2 cups brown rice
optional: 1 cup shredded smoked Cheddar cheese

1. In a large pan place the peas, ham hock, onion, red pepper, salt and pepper. Cover with water and bring to a boil. Reduce heat to medium-low and cook for 1 1/2 hours.
2. Remove ham hock and cut meat into pieces. Return meat to pot. Stir in the rice, cover and cook until rice is tender, about 20 to 25 minutes. Season to taste with salt and pepper. Sprinkle shredded cheese over top, if desired. Serve

Oven Fried Chicken

Mix:

1/4 t. pepper

Roll chicken in mix. Bake at 325 til tender

I love oven fried chicken. I do this one a lot too, only instead of flour, I take reduced fat club crackers, throw in a zip lock bag, beat the bag until they are crumbs and add cajun seasoning. I just dredge the chicken in a little 1% milk first then dredge through the cracker crumb mixture. Very tasty, much more healthy and so much easier than standing over a frying pan!

Use jasmine rice. Add some chopped onion, lightly carmelized in a little sugar. (Fry them with the weenies if you can time it right to get preferred texture.) A dash of garlic powder, chilli powder, curry powder, and black pepper.

EDIT to add: Could always sub some leftover pork chops, or deboned chicken in place of the weenies too.

My mom makes a bangin oven baked chicken that blows the doors off fried chicken. She uses thighs and legs, breaded GENEROUSLY with Italian breadcrumbs. Comes out crispy on top and all gooey and juicy on the bottom.

But I do have to say, yours looks pretty quick and easy. And no doubt tasty as well.

They say oven baked is always better for you. I know I always bake my frecnh fries too.

Steak-umms w/ potatoes & Sauerkraut:

You need:

One can sauerkraut, or one 16 oz. package or serving

8-10 steak-umms

3 large potatoes, diced (peel or leave peel on)

1/2 c water to simmer potatoes

One medium onion, diced

Salt and pepper to taste

*1/2 bottle of beer, optional (to cook sauerkraut in)

method:

Put sauerkraut and beer in saucepan and cover, leave on a slow simmer while you prepare meat and potatoes.

Fry up your steak-umms on med-high heat, don't drain the fat if you want the potatoes to taste good.

Add your potatoes, onions and a little of the water to keep potatoes from sticking. Keep on med-high heat.

Season with the salt and pepper, and whatever you'd like to adlib.

Keep stirring and adding water as needed until potatoes are tender.

Your sauerkraut is now warmed and ready to eat with your meat and potatoes. Fix a big plate, grab a cold brew and enjoy. Or if you're a little bitch, get a glass of tea or water.

Ok, for years I have made my spaghetti sauce from scratch, but I accidently found a fast,easy way, and it's really good especially when you are really hungry and can't wait to eat.

Simply mix a can of spaghetti sauce (Hunts is good) with a large can of crushed tomatoes and stir and heat while you are cooking pasta (angel hair takes 5 min boiling)
Put some Texas Garlic Toast in the oven and you have a delicious meal in 1/2 hour or less.
You can add the frozen meatballs if you like meat, they are delicious, or you can brown ground beef, but anyway it makes a surprisingly good tasting sauce.

Thanks for posting such great recipes, I feel like going out into the kitchen and starting a few all at once, maybe will have a buffet this evening ! hf

I love making these from scratch myself, but gave up being supermom years ago. I think that sounds great.

I do lots of 'add my own' to something else. Like Frozen Pizza. My kids probably don't realize other people actually eat the stuff straight out of the freezer. We take Digornio's 5 cheese and then add fresh tomatoes, mushrooms, olives, garlic, onion and even top off with fresh spinach. Umm... Good!

No need for a cake mix, easiest cake ever !

Pineapple Cake

2 cups flour
2 cups sugar
2 eggs
2 tsp baking soda
1 tsp vanilla
1 can crushed pineapple w/juice

Mix in a bowl and bake at 350 degrees 45 minutes

Chocolate Mayo Cake

2 cups flour
1 cup sugar
1 1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
4 tablespoons cocoa
1 cup water
1 cup mayonnaise
2 teaspoons vanilla

Mix all ingredients together and bake at 350 for 35 minutes.
Do Not grease or flour pan.

Really good and moist chocolate cake. Great for when you are out of eggs. Easy.

Well, being dead-cracked my poor myself at the moment, and for a while in my teens too, I can tell you that hotdogs are are probably the most versatile meat product out there. They last for a real long time in the fridge. I usually splurge a little tho, and go with Nathan's, but save by buying the bulk pack and freezing half of it.

The Hillshire farms kielbasa goes on sale all the time too, BOGO, and they keep real well also. But the smokiness makes it less versatile. Not sure how it would go with our recipes here Asian style.

Quick Caramel Icing

Mix 1/2 cup brown sugar with 6 T. butter. Blend.

Add 6 T. milk and bring just to a boil

Remove from heat and gradually add 2 cups powdered sugar.

In blender, put:

2 small ripe bananas
1 cup unsweetened fresh or frozen strawberries
1 8oz. carton vanilla yogurt
3/4 cup milk

Blend on high speed for 1 minute.

Slice polenta or corn meal mush into slices and line a greased in one layer

Add 1 can of black beans rinsed and drained

Add 1 can of corn drained

Place another layer of sliced corn mush or polenta on top

Pour Salsa over the top

Bake at 350 about 1 hour or until heated throughout

Add cheddar cheese on top and bake until melted

Put a dollop of sour cream on top

I gotta post this... my husband loved it so much he asked me to make a whole second dinner to have more...

Like all simple recipes, the secret is in good ingredients: homemade lean beef jerkey, Idaho potatoes, fresh yoghurt and green onions. The fresh ground black pepper is also key. The savory beef flavor where you expect ham instead, was really good on the baked potatoes.

Beef Jerky Stuffed Potatoes with Yogurt Green Onion Dressing

1 large baked or microwaved Idaho baking potato
1 handful of chipped beef jerky pieces
1/3 cup fresh active cultures yogurt
1/3 cup chopped fresh green onions or chives
sea salt
fresh ground black pepper

Split and spread the baked potato. Sprinkle chipped beef jerky pieces over it. Mix the yogurt, green onion and add salt & pepper to taste. Spread green onion/yogurt dressing over potato and serve.

Fresh Ravioli



1 1/2 cup flour
2 eggs
1 tablespoon olive oil
1/4 water


make a bowl on cutting board with flour
break eggs in middle
add olive oil
mix with fork until eggs blended in
start to mix with hands
add water

Kneed until feels like a babies bottom (about 10-15 minutes)
Put in plastic bag for 15-20 minutes (this take elasticity out)

very Lightly flour
Feed through pasta roller at biggest setting (usually 1)
continue feeding through rollers using smaller setting each time
until and 2nd smallest setting

Cut into squares of desired size
take one square put small amount of fixes of choice (cheese/pepperoni/sausage) in middle
Dip your finger in water and run along edge of square
Place 2nd square on top
Push edges together with a fork

Boil 7-10 minutes (until they float)
Drain
Put on plate and cover with sauce

Easy Quesadilla

With a spoon, spread canned refried beans over tortilla

Put tortilla, bean side up, in pan and heat on medium.

Sprinkle cheese over top.

Top with plain tortilla

Heat over medium heat approx. 3 min. or til cheese begins to melt.

Turn with pancake turner and heat the other side for approx. 2 min.

Serve plain or topped with shredded lettuce, tomato, and salsa or whatever desired.
