This is to die for, all warm, moist and chocolaty. With a dollup of ice cream...you're talking heaven if you love chocolate.

1 box chocolate cake mix
8 oz sour cream
1 pkg instant chocolate pudding
1 cup chocolate chips
4 eggs
3/4 cup oil
1 cup water

Mix all ingredients together. Pour into lightly greased 5qt crock pot, metal coffee can or Crock Pot Cake Bake pan. Cover.

Cook 3-4 hours on high or 6-8 hours on low.

Chocolate Mayo Cake

2 cups flour
1 cup sugar
1 1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
4 tablespoons cocoa
1 cup water
1 cup mayonnaise
2 teaspoons vanilla

Mix all ingredients together and bake at 350 for 35 minutes.
Do Not grease or flour pan.

Really good and moist chocolate cake. Great for when you are out of eggs. Easy.

Slice polenta or corn meal mush into slices and line a greased in one layer

Add 1 can of black beans rinsed and drained

Add 1 can of corn drained

Place another layer of sliced corn mush or polenta on top

Pour Salsa over the top

Bake at 350 about 1 hour or until heated throughout

Add cheddar cheese on top and bake until melted

Put a dollop of sour cream on top

Chocolate Buttermilk Bread

1 cup sugar
1/2 cup (one stick) softened butter
2 eggs
1 cup buttermilk
1 3/4 cups all purpose flour
1/2 cup unsweetened cocoa

1/2 teaspoon baking soda
1/2 teaspoon salt

Mix sugar and butter.
Add eggs and beat.
Stir in buttermilk.
Add dry ingredients.

Pour into greased 9X5 loaf pan.Bake at 350 for 55 to 65 minutes. Serve plain or with strawberry or cherry preserves.

(I modify this recipe to make chocolate muffins by adding a little more cocoa than called for,adding a handful of chocolate chips, and baking in muffin tins.)

I never knew how to make good baked potatoes before- I know, how hard can it be, right?

Anyway, someone told me Alton Brown's way and they come out perfect everytime, not dried out, too crisp, etc.

After you scrub the potatoes, prick them with a fork at least 2 times on each side ,( who knew? I used to stab with a knife once on each side)
Then put some oil in a dish and roll the potatoes around to coat, sprinkle with salt all over and put directly on the top oven rack, put a baking sheet or foil on the lower rack.
Bake 1 hour at 350 degrees and fill with your favorite toppings - you'll never look at a baked potato the same way again tounge

Tacos.

Pan fry fresh tortilla in some canola oil. Do not overcook. Just golden and crisped, but not hard. Fold in half to rest on paper towel to drain excess grease.

Fill with whatever you like. Pan fried seasoned meat or fish, some veggies or salsa, beans, dairy, maybe a chili sauce.

Once you pan fry a tortilla crispy like that, you'll never bother with a "soft taco" again.

Pineapple Nut Cake

2 cups flour
2 cups crushed, drained, pineapple
2 cups sugar
2 t. baking soda
2 eggs
1 cups walnuts

Combine ingredients and bake in a greased 9X13 pan at 350 for around 40 minutes.


A good frosting for it is:

1 8oz. pack of cream cheese whipped with 1/2 cup butter. Add 1 T. vanilla and enough confectioners sugar to make it spreadable. Approx. 1 to 2 cups.

Oh yeah, I do that. Works great! And you can make baked potatoes for going camping that way, too. They get pretty much sterilized in the steam and don't go bad.

Sadly, they don't crisp as much as they do in the oven, but they do have a slight crust. I love oven baked taters myself, but hate waiting hours and hours.

My favorite comedian had a great joke about baked potatoes.

3 Weeks Cole Slaw

3 pounds white cabbage, chopped
1 green pepper, chopped
2 white onions, chopped
1 1/2-2 cups sugar
1 cups salad oil
1 cup cider vinegar
1 t. celery seed
2 t. salt

Combine cabbage, pepper, onion and sugar.Mix.

Mix oil, vinegar, celery seed and salt and bring to a hard boil.

Pour over cabbage mixture and stir very well.

Store in an airtight container. Let stand at least 3 days. Flavor improves with age. Will keep refrigerated for a month.

Blueberries will be in season soon in our area. If you have freezer space, these recipes freeze well and brighten a long winter day.

Blueberry Muffins

Combine:
3 T. melted butter
3 1/2 T. sugar
1 egg

Sift together:
2 cups flour
1 T. baking powder
1/2 t. salt
Add to the butter/sugar/egg mix alternately with 1 cup milk.

Beat until batter is full of bubbles.

Stir in 1 cup blueberries.

Pour into muffin tins filled 3/4 of the way. Bake at 350 for about 30 min. Makes 12.



Blueberry Bread
2 cups flour
1/4 cup sugar
1/2 t. baking soda
1/2 t. salt
1/4 cup molasses
1 cup sour milk or yogurt
2 T. butter, melted
1 egg, beaten
1 cup blueberries

Sift together dry ingredients.Combine molasses, sour milk or yogurt, butter and egg. Mix well. Turn into 9X9 pan and bake at 350 for 40 minutes.

This is pretty easy...

Mexican Stew
Put about a pound of beef, cut into cubes in the crock pot with half and onion and a large can of diced tomatoes (undrained), maybe 1/4 cup of water. Season with chili powder. Cook 6-8 hrs on low. When you get home, add a can of black beans, a can of mexicorn, and a packet of taco seasoning.

Serve over rice or those baked potatoes from above, top with cheese.

It makes alot and freezes well.

Toast a piece of wheat bread.

Spread with cream cheese after toast cools.

Fry some bacon, remove and drain.

Cook 2 eggs in the bacon fat, fried, with runny yolks.

Remove, put in bowl with bacon, and mix - should be runny.

Spread mixture on cream cheesed toast - add salt and pepper.


Voila!

Easy Peanut Butter Cookies

1 egg

1 cup sugar

1 cup peanut butter

place ingredients into bowl,

mix well,

place on buttered cookie sheet in small balls evenly spaced,

bake at 350 degrees for 10 mins (depends on your oven)

cool slightly, remove, repeat, enjoy

I think it makes about 3 1/2 dozen. Good for the kids to help make as well.
