After you scrub the potatoes, prick them with a fork at least 2 times on each side ,( who knew? I used to stab with a knife once on each side)
Then put some oil in a dish and roll the potatoes around to coat, sprinkle with salt all over and put directly on the top oven rack, put a baking sheet or foil on the lower rack.
Bake 1 hour at 350 degrees and fill with your favorite toppings - you'll never look at a baked potato the same way again |

Pan fry fresh tortilla in some canola oil. Do not overcook. Just golden and crisped, but not hard. Fold in half to rest on paper towel to drain excess grease.
Fill with whatever you like. Pan fried seasoned meat or fish, some veggies or salsa, beans, dairy, maybe a chili sauce.
Once you pan fry a tortilla crispy like that, you'll never bother with a "soft taco" again. When the Lamb opened the third seal, I heard the third living creature say, "Come!" I looked, and there before me was a black horse! Its rider was holding a pair of scales in his hand.
Then I heard what sounded like a voice among the four living creatures, saying, "A quart of wheat for a day's wages, and three quarts of barley for a day's wages, and do not damage the oil and the wine!"

Want to know a faster way that will amaze and astound you?
Scrub a baking potato and dry with paper towel.
Rub with olive oil and sprinkle with coarse ground sea salt.
Take out your Saran Wrap or whatever cling wrap you have.
Wrap that tater about 5 times with the wrap and put in the microwave for 5-7 minutes.
The wrap will expand, but not explode. I've done it dozens of times. The tater will come out the fluffiest and tastiest you've ever had. If 5-7 minutes isn't enough, slap it back in and cook for another few minutes. |

Sadly, they don't crisp as much as they do in the oven, but they do have a slight crust. I love oven baked taters myself, but hate waiting hours and hours.
My favorite comedian had a great joke about baked potatoes.
"I don't have a microwave. Sometimes, I'll throw one (a baked potato) in the oven, even if I don't want one... Cos, by the time it's done... who knows? Hell I throw one in there, and go on vacation!" - Mitch Hedberg 1968-2005 |
