| ac User ID: 700317 08/21/2009 11:52 PM Report Abusive Post Report Copyright Violation | Saute in hot (bubbling, not smoking) butter, turn,smear on mustard and worcestershire sauce, turn once to get some in the pan, then back to second side. Great to add mushrooms or onions. Grilled is great of course. This way is nice if you don't have a grill. Of course it has to be pink inside. the butter helps the lack of fat in the meat. If you want salt, add sea salt after cooking. You can also put more butter on the top. Don't waste the pan juices--can loosen with a little wine (off burner) then return for slow reduction while the steak rests. |

Fry on high heat for 3 minutes, then flip and fry for 3 more minutes. Place on oven pan and put in oven to finish cooking. 3-4 minutes for med rare 5-7 medium 8-12 medium well After cooking in oven, set on plate with tin foil over top, cover well. Rub sea salt into both sides of the filet. Before the butter starts to burn, sear the meat, one minute exactly each side. After one minute on the second side, turn the heat down to medium low. Three more minutes, then flip it and give it three minutes on the other side. This is for perfect medium rare. Make it four minutes per side for medium medium. You will never cook a filet mignon on the grill again. |
