only in America is it called canning
the correct term is 'preserving'
and we use glass jars as containers
not tin 'cans'.

The term "canning" is appropriate. In the ol' days, when a lot of women cooked only on wood stove, the long cooking periods for preserving in jars was very difficult, especially in the summer.

The USDA, or someone, set up canneries around the country and women were allowed to take prepared veggies to the cannery and "put up."

Thus, we get the term "canning" for home-preserved food in containers.

When gas cooking stoves became available for home use, a lot of the home canning was done by putting the jars of food in the oven and heating to a certain temperature for a specific time.

Bread and Butter Pickles
Better Homes and Gardens Cookbook

Makes 7 pints

4 quarts sliced medium cucumbers
8 medium while onions, sliced
1/2 cup pickling salt
3 cloves garlic, halved
cracked ice
4 cups sugar
3 cups cider vinegar
2 tablespoons mustard seeds
1 1/2 teaspoons ground turmeric
1 1/2 teaspoons celery seeds

1. In 6 to 8-quart stainless-steel, enamel or nonstick kettle, combine cucumbers, onion, pickling salt and garlic. Add 2 inches of cracked ice. Cover with lid and chill for 3 to 12 hours.

2. Remove any remaining ice. Drain mixture well in large collander. Remove garlic.

3. In the kettle, combine sugar, vinegar, mustard seeds, turmeric and celery seeds. Heat to boiling. Add cucumber/onion mixture. Return to boiling.

4. Pack mixture and liquid into hot sterilized pint canning jars, leaving 1/2-inch headspace. Wipe jar rims; adjust lids. Process in boiling water canner for 10 minutes. Remove jars; cool on racks.

I use a very similar recipe as this. The only difference is that I add powdered cloves (half as much as the tumeric amount), and I add a couple diced sweet bell peppers to the mix. GOOD STUFF!!

in Australia we have very limited food preservation options. We can do jams and fruit but that is about all.

"high pressure" canning (or food preservation), ie low acid foods is not done of a domestic level, which really sucks.

there have been complaints from a few of my friends across the country (to include myself the other night)

even tho canned in pressure canner - food is going bad.

we're suspecting this might be deliberate?? because of codex and possible food hoarding laws.

if you can find the gold rings/lids stock up. cant find them here now.

Cloudy and foamed 119 jars in two years. They were all with new lids.

We have ran out of the gold and purchased the new lids 2 weeks ago for upcoming canning. I will be returning these lids and start looking for the old ones. Could be a hard task.

Once again thanks so much for pointing this out. It is the ONLY change from a generational canning recipe.

Just curious as to how it holds up, what it tastes like?

It's the one thing I've never tried but I would like to.

I just bought a bunch of them at Dollar General. The silver ones are probably made in China.

I did find some gold ones on Amazon. The Dollar General brand is only $1.50 a box.

I'd like to add something to this thread. It is possible to buy reusable canning lids. They are called tattlers.

I've spoken to people who have used and reused them many times and they speak very highly of them. If you order them in bulk, then they only cost about twice as much as the one time use lids. Except they will still be around decades later when the one time use lids have all rusted away. (They are rusting faster nowadays.)

I'm placing my first order tomorrow. I talked with a bunch of people and have enough interest to place a bulk order.

(Sadly, I have no financial interest in the company. Other then planning on ordering from them tomorrow.)

Yes. Do it. It will be the best thing you ever do for your food storage.

It is delicious. The tecture is similar to canned meat at the grocery store and the flavor is amazing. I have kept it on the shelf for about 2 yrs before using. It was still beautiful and flavorful.


It can help if you ever get meat that taste 'off'.
We had some bad tasting beef, just off flavored. Rather than throw it away, I decided to can a batch to see if it would help. It was so wonderful and helped to not have to waste the meat with the 'off' flavor.

I have canned:
Beef Chunks
Ground Beef
Ground Sausage
Sausage Links
Chicken Chunks
Bacon

It is easy, cost effective for storage, and oh so tasty.

When I have to live out of my food storage for some reason, I will have BLT's with fresh garden tomatoes. What will you be eating?
