They didn't. The zodiac has been added to over generations.

The constellations of the zodiac are along the line of the ecliptic, which is not inclined to the line of the celestial equator enough to make any of the constellations in the zodiac specific to either hemisphere; many people in both hemispheres can see the entire array of constellations along the ecliptic. They didn't know about or create any constellations for stars specific to the opposite hemisphere, and such things are irrelevant to astrology as we know it today.

Most people do over-estimate ancient sky charts. Their ability to predict how long and when a star or planet will be visible is "extraordinary" to many people because so few people in the modern era take nearly as much notice of the sky or have an instinctive understanding of when and where the planets and stars will appear. The end result is thread after thread of people breathlessly taken aback by the appearance of Jupiter, Venus, or even the moon.

How the Mayans built a calendar superior to even modern man's capabilities, that is very impressive.

I once thought of a theory.......

The Earth must have had a much weaker gravitational effect. The clues are this,

1 - Stone monuments to heavy to build. It would explain pyramids and the such.
2 - Creatures, like dinosaurs, to big to live under there own weight. Explains why they died off. Flying creatures were larger back then.
3 - Fish fossils in areas where there is no ocean
4 - Gravity is fluctual, meaning the chances of gravity remaining constant is not as likelyu as it can alter.

Just a theory but it would explain soooo many historical mysteries.

Notice how a lot of our ancient civilizations have carvings of aliens and talk about people coming from the sky... they told them.
