**Fried Potatoes** OMG!!!

Add an onion to the potatoes and fry in iron skillet.

Then salt is all you need.

+1 ... except I use both salt and pepper.


This is good, too:

Fry up the potatoes, then just before they are done, break an egg or two into the pan and cook it all together. The egg whites will mix with the potatoes as they cook. Delicious.

I was somewhat poor as a child and was fed potato cakes. Basically left over mashed potatoes...very delicious...

My mom used to fry mashed potatoe patties too -- funny, but I had forgotten about that. We never wasted food back then.
