6-8 meals for under $12 (Recession food)! - MOROCCAN LENTIL SOUP
This is a very nutritious and DELICIOUS dish, full of carbs and protein. In this economy, its cheap too! Enjoy this "I thought about keeping it secret" recipe GLP!

MOROCCAN LENTIL SOUP

Ingredients:

2 cups of chopped onion (about 1 large yellow onion, or 2 medium)
6 cloves of garlic, smashed and minced
1 teaspoon of grated ginger root
4 medium large carrots, a little less than the onions, chopped
1 cup of dried Lentils
1 cup of dried Northern Beans
1 cup of dried Chick Peas
4 large tomatoes, diced into fairly large cubes (a little less than an inch) – approx 2lbs
8 cups of water
Olive oil
½ teaspoon of turmeric
½ teaspoon of ground coriander
2 teaspoons of ground cumin
2 teaspoons of smoked or regular paprika (I used smoked)
½ teaspoon of cayenne for medium heat, 1 teaspoon for pretty hot, 1.5 teaspoons if you are very very brave.
About 20 turns of fresh ground black pepper
Salt to taste, sugar to compliment (explained later)
Cilantro, chopped.

Preparation:

Start by preparing the beans and lentils. In a sauce pan, combine dried chick peas and northern beans and cover with water. Allow to come up to a boil, and then turn off the heat and allow to sit for 1 hour. After 1 hour, strain the beans, rinsing under cold water and then set aside. If you have another sauce pan, you can cook the lentils at the same time. Cover lentils with water and bring to a boil for approximately 2 minutes, then reduce to simmer uncovered for about 20 minutes. Once they are done, drain, rinse and set aside.

In a large stew pot, add olive oil and allow it to come up to medium high heat. Add onions when the pot is heated and sauté for about 2 minutes, then add 1 of the teaspoons of cumin, coriander, paprika, turmeric, garlic and ginger. Sauté for another few minutes until the onions are soft. It will get very aromatic, not to worry. Then add the water, tomatoes, carrots and the last teaspoon of cumin. Stir, then cover and allow to come up to a boil. Boil for a few minutes, and then reduce the heat to simmer. Salt (I used about 2 tablespoons, but I don’t measure) to taste. Add a couple of good pinches of sugar to counter the salt. Simmer with the cover vented (cover about 3/4ths) for about 1 hour or more, until the beans are soft but not too soft! When the beans are done, re-season with salt and an appropriate amount of sugar to counter (all tastes differ). Add the fresh ground pepper and allow to simmer for a few more minutes.

Serve in a bowl and garnish with some fresh chopped cilantro. Makes about 6-8 servings, depending on how hungry you are.

True, and you don't have to school me on that front. I have over 50 cans of tuna in my stockpile, but this isn't all that much more expensive and tastes a hell of a lot better than a can of tuna. Also, I am not in survival mode (yet), I am in weathering the storm mode. :)

My favorite lentil recipe is a little quicker to prepare. I can have it on the table in 45 minutes.

2 cups lentils

3 stalks celery chopped
# carrots chopped
1 can tomatoes
garlic, salt, pepper, and dried oregano to taste

Add lentils, 8 cups water, and remaining ingredients to soup kettle. Cover and simmer for 35 minutes. Serve with white wine vinegar. Delish!

I'm sorry to be obnoxious, but if you read the ingredients on the Campbells, you will probably decide to invest in the spices. You can't pronounce most of those ingredients and you shouldn't be eating them.

That assumes that you will only use the ingredients once, my friend. I have a large collection of spices and seasonings because food without spices and seasoning is um... crap. Most spices and seasonings do not expire very quickly either. They last years. Also, the spices in the recipe are not "exotic", if I can find them at Kroger - they are mainstream. Enjoy the recipe if you cook it, and if you like it, I'm glad you did.

My recipe is pretty cheap (~5 bucks). Not that we're on food stamps, but we eat it twice a month during the winter. Not because we have to but because we want to. It also makes great leftovers!

+1 to the OP. Buy spices that you use in bulk. They don't cost much in the long run. And buy spices for your preps. They will really help with menu fatigue. Can you say tabasco!

Not as tasty as the Moroccan soup, but a staple in my house even when we don't need to save money:

3 bags split peas: $3
Bag org. carrots: $2
3 onions: $2.50
Bag organic celery: $3.00
tomatoes (optional):$3.00
whole grain bread: $3.00

Total: about 16.50 (or on a tight budget, 10.50). Will feed a family of four dinner three or four nights. Boring after a couple of days, but nutritious, and nobody goes to bed hungry.

I have recommended organic celery and carrots because these are two veggies that really should be bought organic when possible, and the price is not increased much if you buy organic. Tomatoes, peas, and onions are ok non-organic.

Boil split peas for 45 minutes, adding veggies about 15 minutes before taking off heat. Add salt, pepper, and if you have it, rosemary and garlic. If you have it, add a couple of tablespoons of olive oil but this is not necessary. This soup is even better if run through a blender but blending is not necessary.

Please note that on a tight budget, tomatoes are optional. Bread is also optional but adds greatly to enjoyment.
