Do you think I should make more cheese for if doom arrives, also how to keep them good?

Last year I saw videos how to make your own cheese, it seemed not difficult so I tried it out. It's indeed easy and now I have made hundreds of cheeses. Currently my cellar stores approximately 400 lb of different flavours of cheeses for when the shit hits the fan.

Do you think I should make more cheese, also what do you recommend to keep them good for a longer period, say years?
