There is a lot of hype about chicken parmesan lately and the reason for this is clear: it is a delicious dish, perfect for kids and large families, parties or other social gatherings. But there seems to be one general recipe which seems to be roaming the net nowadays, that is why I would like to offer a pleasant alternative to this established classic. I personally found most recipes to contain too much fat. This recipe on the contrary offers a much healthier substitute. I picked up this simple particular version on my travels through the north of Italy. I stayed a while at a place of a friend of mine and each evening I got treated by the culinary delicacies cooked by his mother who lived next door. The food she cooked was exceptional but it was this very chicken dish that I almost immediately fell in love with. It took me a while to unlock the secret from her, but with patience and convincing charm I managed eventually. So back home, guess what was the first recipe I cooked for my friends? Whenever I invite them they ask me if I cook chicken parmigiana. I want to share this special recipe with you.
But mind you, your family will be screaming for more, so make sure you are prepared with enough of it.
Here are the ingredients you will need:
(serves 4)
- 4 pieces of boneless chicken breast
- 2 tablespoons of flour
- 4 tablespoon of parmesan (preferably Parmigiano-Reggiano)
- 1 whole egg
- 2 garlic cloves, minced
- 3 ounces of butter
- 1 tablespoon of cooking oil (preferably olive oil)
- 2 tablespoons of parsley, minced
- 1 teaspoon of bird pepper (cayenne pepper)
- 1 teaspoon paprika
- pinch of salt and pepper
- 8 slices of Italian white bread (for example ciabatta)
Preheat the oven to 420 F. Put parmesan, flour, paprika and bird pepper in a bowl and mix well. Beat egg in another separate bowl. Wash chicken breasts with water and place on kitchen towel. Drain the chicken first in egg then in parmesan mixture. Prepare oven tray with oil. Lay chicken parts on roast and cook for 15 minutes.
Meanwhile add garlic, parsley, salt and pepper to butter and mix well. Spread this mixture onto bread slices. Turn chicken breasts after 15 minutes and sprinkle with the rest of the parmesan mixture. Add to bread slices on the tray and bake for another 10 minutes. Serve hot.
A nice rocket salad or a tomato salad fits perfectly with this dish.
Alternatively, you can cut the chicken breast into smaller pieces which makes it perfect for finger food.
