Pasteurization destroys the Tryptophans present in foodstuffs.
But the egg proteins would coagulate if they were brought up to pasteurization temps.
I think the eggs are being recalled because they have unusually high Tryptophan levels.
The federal government strictly enforces the pasteurization of dairy because they want to keep you from getting Tryptophans.
Because Tryptophans are metabolized into Serotonin and then into Melatonin and eventually into DMT.
