For those who enjoy venison - it's that time of year again.
I posted this on another thread but thought I'd start a new thread - add your venison recipes!
Venison Bacon Burgers
2lbs ground venison
6 slices bacon
2tbsp olive oil
2 shallots - minced
1 tbsp Worcestershire sauce
1 tbsp chopped fresh parsley
1 tsp minced garlic
1 egg - beaten
salt and pepper to taste
Cook bacon till crispy
Pour bacon grease into bowl and cool. Heat olive oil and saute garlic and shallots until soft. Mince bacon and mix into venison. Add worces. sauce, parsley, salt, pepper, bacon grease and egg to venison and mix till evenly combined. Refrigerate for at least 20 minutes - 2 hours is preferred.
Separate into patty size rounds and grill.
