Species change appearance over time, we see snapshots of what is basically a 4 billion year time lapse in the fossil record. As fossilization is a super rare event that usually requires disasters like floods for it to happen. If a dog evolved into a giraffe evolution would be debunked. What we would expect is a dog species "turning" into another dog-like species. Dogs have changed dramatically over the last 30 million years.
