I just finished making a huge spinach pie with cheddar cheese, mozarella, sauteed onions and garlic, 6 eggs, 2lbs of spinach, cooked down to a few oz.'s, salt, pepper, dash of cayenne, dash of curry, dash of dill. In a large bowl, squeeze water out of spinach after cooking. Cut spinach into small pieces with kitchen food scissors. Saute a medium onion and as many chopped, mince garlic cloves as you like. I use 5. Beat eggs, mix in. Cut cheeses into small cubes or pieces, add to egg and spinach mixture. Pour the mixture into a greased casserole dish or pyrex. I used butter on it. Bake at 350 for about an hour. I added more mozzarella on top after it browned. Let cool a little b4 serving, it's very hot. It is like a spinach fritata or pie. Delicious! I'm making homemade chicken fingers, smashed potatoes and a tossed wild green/romaine mix salad with olive oil, vinegar & dill dressing. Grape juice for beverage.
